Beef, Bean and Cheese Burritos

Ingredients

Meat

  • 1 lb Ground beef, lean

Produce

  • 4 Garlic cloves
  • 1 Lettuce
  • 1 Onion, small
  • 1/4 tsp Oregano, dried
  • 1 Tomatoes

Canned Goods

  • 1 16 oz. can Refried beans

Condiments

  • 1 Guacamole
  • 1 Hot sauce
  • 1/2 cup Salsa

Pasta & Grains

  • 1 Rice

Baking & Spices

  • 1 1/2 tsp Chili powder
  • 1/2 tsp Paprika, smoked
  • 1/4 tsp Pepper
  • 1/2 tsp Salt

Nuts & Seeds

  • 1 tsp Cumin, ground

Bread & Baked Goods

  • 6 Burrito size flour tortillas

Dairy

  • 1 1/2 cups Cheddar cheese, sharp
  • 1/4 cup Sour cream
  • 1 Sour cream

INSTRUCTIONS

  1. Add onions and beef to a large skillet and cooked over medium heat until onions are softened and meat is cooked through. Add garlic and sauté for 30 seconds. Drain off any excess fat (if there is any).
  2. Stir in all of the spices/seasonings, followed by refried beans until well incorporated, followed by sour cream and salsa. Heat through.
  3. If using raw tortillas, cook according to package directions. If using cooked tortillas, stack them together on a plate, cover with a damp paper towel and microwave for 30 seconds or until warmed through.
  4. Line the middle of each tortilla with desired amount of cheese. Top with Bean and Beef filling and any additional desired filling ingredients.* Fold in the edges of each tortilla and roll up “burrito style.” Serve with additional sour cream, guacamole, etc. (optional).
  5. Optional to “crisp” burritos: Heat a large nonstick skillet over medium heat. Add burritos, 3 at a time, seam side down, and cook until golden, about 2-3 minutes per side.

  • 1 1/4 lb Ground beef

Produce

  • 1 (15 ounce) black beans
  • 1/2 tsp Chipotle chile, powder
  • 3 cloves Garlic
  • 1 tsp Garlic powder
  • 2 tsp Mexican oregano
  • 1 Onion, medium medium
  • 2 tsp Onion powder

Canned Goods

  • 4 cups Beef broth, unsalted
  • 1/4 cup Tomato paste

Condiments

  • 1 (15 ounce) can Tomato sauce

Pasta & Grains

  • 1 1/2 cups Cilantro lime rice, prepared

Baking & Spices

  • 1/2 tsp Black pepper, ground
  • 3 1/2 tbsp Chili powder
  • 4 tbsp Flour
  • 1 tsp Salt
  • 6 1/2 tbsp Spice blend
  • 1 tsp Sugar

Nuts & Seeds

  • 2 tsp Cumin, ground

  • 6 (10-inch) burrito-style tortillas, large

  • 4 tbsp Butter
  • 12 oz Colby-jack cheese, grated

Instructions

  1. For the Spice Blend:
  2. In a mixing bowl, whisk together all ingredients. Set aside.
  3. For the ground beef:
  4. Use a deep frying pan with a lid to cook the ground beef. Heat frying pan over medium heat; cook together the ground beef, onion and garlic, breaking up the ground beef well. When ground beef is no longer pink, remove pan from burner and drain grease.
  5. Return pan with meat mixture to the burner. Sprinkle with Spice Blend; stir well. Whisk together the tomato paste and beef stock. Pour it over the meat mixture.
  6. Bring meat mixture to a simmer then cover pan, leaving lid slightly askew to allow steam to escape. Simmer, stirring occasionally, until most of the liquid has evaporated, but the meat mixture is still moist. If meat mixture becomes too dry, add a little water or additional stock. While meat is cooking, make the spicy gravy.
  7. For the spicy gravy:
  8. In a saucepan, melt butter over medium heat. Make a roux by sprinkling the melted butter with flour and whisking together until smooth. Cook, whisking constantly, just until the roux begins to turn a light golden brown and smells nutty.
  9. While whisking briskly, slowly add the beef stock to the roux.
  10. For the assembly of the burritos:
  11. Heat oven to 350F. Lightly butter a 9- x 13-inch baking dish. Set aside.
  12. Place one end of a kitchen towel on a dinner plate. Place the tortillas on the towel and cover with the remaining portion of the towel. Warm the tortillas in the microwave for 1 minute at 50% power. Check tortillas for warmth and pliability.
  13. Ladle spicy gravy over the burritos.

  • 1 Bell pepper
  • 1 Onion
  • 1 Onion powder

  • 1 Chili powder
  • 1 Pepper
  • 1 Salt

Oils & Vinegars

  • 1 Olive oil

  • 1 Cumin

  • 1 Flour tortillas, Large

  • 1 Cheese - cheddar

Preparation

  • Heat olive oil in a large skillet over medium-high heat. Add onion and pepper and cook for about 3-4 minutes, until softened. Add ground beef to skillet and cook until no longer pink. Drain any excess grease. Season beef with salt and pepper. Add cumin, onion powder, chili powder and salsa. Stir until thoroughly combined and remove from heat.
  • Preheat oven to 400 degrees F and lightly spray a large baking sheet with non-stick cooking spray. Grate cheese on largest side of your box grater.
  • Assemble the burritos.
  • Place a generous 1/3 cup of the beef mixture in center of tortilla. Add two tablespoons of grated cheese over the beef. Fold the sides toward the center. Fold up the bottom and roll to the top. Place on baking sheet, seam side down, bake for 20 to 25 minutes at 400 degrees F, until the outside of the burritos are crisp and lightly browned.

Directions

  1. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. In a small saucepan, cook refried beans over medium-low heat for 2-3 minutes or until heated through.
  2. Spoon about 1/3 cup of beans off-center on each tortilla; top with 1/4 cup beef mixture. Sprinkle with cheese. Fold sides and ends of tortillas over filling and roll up.
  3. In a large skillet over medium-high heat, brown burritos in oil on all sides. Serve with sour cream and salsa.

Instructions

  1. Cook the ground beef in a large skillet over medium high heat until no longer pink, breaking up as it cooks. When it is almost done, add the cumin, chili powder, coriander, salt and pepper. When completely cooked, stir in the refried beans and water. Stir to combine and remove from heat.
  2. Meanwhile, in another skillet over medium heat, melt the butter. Add the flour and whisk together. Cook for 1 minute.
  3. Slowly whisk in the chicken broth. Let it come to a bubble and cook, stirring often, until it starts to thicken. Remove from the heat and stir in the sour cream and green chiles.
  4. Assemble the burritos: Working with one tortilla at a time, spread ⅙ of the beef mixture down the center of the tortilla. Sprinkle about 2 tablespoons of the cheese over the beef. Fold in two ends of the tortilla, then roll into a burrito.
  5. Place the burrito on a plate and spoon some of the Green Chile Sauce over the burrito. Add 2 more tablespoons of the cheese over the top. Top with shredded lettuce and diced tomato.

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, cook the ground beef, until the beef browned. While beef is browning, mix together in a small bowl, the chili powder, garlic powder, onion powder, oregano, paprika, cumin, salt pepper and cornstarch. After beef is browned, sprinkle the seasoning mix over the beef and mix well. Stir in water and simmer until water has evaporated, about 10 minutes.
  3. In a medium bowl, mix together sour cream, cream of chicken soup, green chilies and cheese.
  4. Mix about half of the cheese mixture with the ground beef. Divide the meat mixture evenly between tortillas and roll up. Place in a 9 x 13 inch baking dish. Repeat for each tortilla. Spoon remaining cheese mixture over the top of the tortillas.
  5. Bake in preheated oven for 20 to 30 minutes.

Red Sauce Smothered Burritos (Instant Pot)

Ingredients

Meat

  • 2 Beef bouillon cubes or 2 teaspoons beef base
  • 3 lb Beef rump roast, boneless

Bread & Baked Goods

  • 12 Burrito-size flour tortillas

Dairy

  • 2 cups Colby jack cheese

Prepared

  • 16 oz Enchilada sauce

Liquids

  • 1/2 cup Water

Instructions

  1. Add beef, half of the enchilada sauce, bouillon cubes and water to the Instant Pot. Select High Pressure and set the timer for 30 minutes. When beep sounds, turn off pressure cooker and use a natural pressure release for 10 minutes and then do a quick pressure release to release pressure. When valve drops carefully remove lid.
  2. Turn oven on to broil setting.
  3. Line a rimmed baking sheet with aluminum foil. Place one flour tortilla onto the sheet and add approximately 1/2 cup beef to the center of the tortilla. Fold in the sides and starting at one end, roll up into a burrito. Repeat with remaining tortillas. Top with enchilada sauce and shredded cheese. Broil until cheese is bubbly, about 2-4 minutes.

  • 1 can Mexican tomato sauce or enchilada sauce

Directions


  1. Brown ground beef with onion and season to taste. Pour in sauce and simmer over low heat. Add water if mixture gets too dry.
  2. Heat refried beans in a saucepan. Add cheese and stir in till melted. Keep warm.
  3. Heat tortillas in microwave for one minute.
  4. Spread a small amount of beans on each tortilla. Add meat. Fold over ends, then roll up. Place two burritos on a microwave-safe plate. Drizzle red sauce over the top and sprinkle with more grated cheddar. Microwave for one minute, or until cheese is melted and burritos are very hot. Serve immediately.
