Fluffy Banana Pancakes

This is a super easy, fast recipe that makes pancakes just a little more tasty. This is a great way to use up brown, mushy bananas so they don't go to waste.

Yields: 10-12 medium size pancakes


  • 2 C Bisquick mix
  • 1 C Milk
  • 2 Large eggs
  • 2 Ripe bananas, mashed
  1. Preheat an electric griddle to 375 degrees or preheat a non-stick skillet over medium to medium-high heat.
  2. Mash bananas into a thick mush with a fork. Make sure to mash all large chunks.
  3. Make the batter with Bisquick, milk, and eggs. Stir in the mashed bananas. Using a 1/2 C measuring cup, pour batter on to the griddle or skillet. Wait for bubbles to appear and flip the cake. Do not flip more than once to maintain fluffiness. Serve hot with warm maple syrup.
