Easy Celery Soup

Celery Soup Made Easy

Celery soup is easy to make and a delicious vegetarian soup. I love cooking with fresh fruits and vegetables because it easy and so healthy for the body. If you are vegan, use coconut milk in replacement of the 2% milk.


  • 3 tablespoons olive oil
  • 6 celery stocks
  • 1 thinly sliced leek
  • 2 red apples (peeled,cored, and diced)
  • 1 tablespoon curry powder
  • 14 oz low-fat coconut milk or 2%milk
  • 2 1/2 cups of vegetable broth
  • 1 tablespoon lemon juice
  • celery leaves for garnish
  • 1/4 cup sliced almonds

Heat oven to 350 degrees. Place almonds on baking sheet and toast 8-10 minutes. Cool.

Heat olive oil in a large pot on medium heat. Add celery, leak, and salt. Cook for 5 minutes. Vegetables should be soft after 5 minutes of cooking. Stir in apples and curry powder. Cook for 2 minutes. Add milk, broth, and water. Bring soup to a boil. Reduce heat. Simmer for 15 minutes.

Puree soup in a blender or use an immersion blender until smooth. Return to pot. Add lemon juice. Season with salt and pepper. Add celery leaves and almonds as a beautiful garnish.

Serve and enjoy!

      This is a soup I need to try. Did you know that celery is a brain food? This will be a nice change from the crunchy celery. Thanks for sharing this.
