Cook Time

Prep time: 20 min
Cook time: 4 hours
Ready in: 4 hours 20 min
Yields: 8 servings

  • 7 Russet potatoes, medium, peeled and cubed
  • 1/2 Onion, large, diced
  • 3 Garlic cloves, minced
  • 4 cups Chicken broth
  • 1.5 tsp. Salt
  • 1 tsp. Pepper
  • 4 Tbsp. Butter, salted
  • 1 cup Half & half cream, fat-free
  • 2 cups Sharp cheddar cheese, shredded
  • 13 slices Bacon, pan-fried
  • 1/4 cup Green onion or chives, chopped
  • 1 cup Sour cream
  • Shredded cheese, for sprinkling

  1. Peel and cube potatoes.
  2. Dice onion & mince garlic.
  3. Combine potatoes, onion, garlic, chicken broth, salt, pepper, and butter into a large crock pot. Stir.
  4. Cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender.)
  5. While stock is cooking: slice, pan-fry, and drain bacon (set aside.)
  6. Chop green onion and place in small container (refrigerate.)
  7. Mash cooked mixture until potatoes are chopped (thickening the soup.)
  8. Stir in half & half cream, cheese, green onion, and bacon.
  9. If ready to serve, turn off crockpot, otherwise leave on "warm" setting.
  10. Serve soup topped with a dollop of sour cream and sprinkled with cheese.
  11. Enjoy! =(^-^)=

Note: After trying a loaded baked potato soup recipe I found on, I made a few adjustments to accommodate my family's taste. The above recipe is a result of that adjustment. For the original recipe, see the video below.

      Hi rebeccamealey!

My husband likes the canned version as well; not bad for a quick fix. This recipe takes that basic flavor and kicks it up with lots more cheese and bacon....SO YUMMY!

      Hi ptrg777!!

I've heard of people adding beer too, usually the darker ales (although, I'm not a fan of adding beer to foods that don't cook on the grill.)

YAY for football season!! My team is actually doing well this year (Skol Vikings!!!) Anywho, this easy recipe is sure to be a hit at your next game get-together...with that much bacon & cheese, you're sure to SCORE!!!

Ok, this is a bit calorie dense for me, as I am trying to shed some pounds, but boy does it look tasty. I will keep this in mind for when I reach a goal and want to treat myself with something tasty and indulgent. I will share this with family also, as it would make a great soup for a football party or any party for that matter.
