When the weather starts getting cooler, that is that time of year that makes you look forward to having a few days off from work, for the holidays. It is a time to get to see those loved ones that we never get to see. With work schedules like they are today, family seems to kind of fall to the back burner. It is not intentional but, it does happen.

If your family is anything like mine, we love to cook, and eat it too. This is a great dish to take to those holiday functions.

When you have company coming whether expected or unexpected you can have these few cheap ingredients on hand in the pantry. You can put this dish together in a matter of just a few minutes and it's very good and only gets better with time.

This is one of those recipes that everyone seems to like. This is a simple recipe that doesn't have anything in it that you probably already have on hand. It doesn't have anything that a kid wouldn't eat in it and of course, the adults love it. It stores well and can be frozen and warmed up later to eat. You can't help but want to make this dish and keep it frozen to be warmed up quickly. The holidays just reinforce that idea. You never know who might pop in.

Easy food to make

This needs no description. It makes you have that warm fuzzy feeling that I get when I think about going home. Comfort food is made and we sit around and take our time and visit and catch up. My mom and dad have both retired this year and they have both been busier than before they retired. My dad had a long drive everyday and sometimes he worked odd shifts, I just worried about his safety.

Several recipes of this sort will be made ahead of time for the holiday season and will be brought out in droves. There's never a shortage of food and if you didn't bring anything, don't worry about it. It is enough that you brought yourself. When making this dish, I picture driving home a couple of hours to see my family. This is a great recipe to fix if you are having company or going to visit. It travels well.

One little trick that I learned from my neighbor, I like to brown the stewed pieces of meat. When it has a great browned outside to the pieces of meat, I take them up out of the skillet and them put them in the crock pot.

This recipe is paired nicely with cornbread. If you like a little spice in your life you can make Mexican cornbread.

Going home for the holidays

Somehow, the comfort food just makes you feel and think of home. I think everyone would agree (if you get along with your family, of course), that going home makes you feel warm and fuzzy and it makes you feel like you are doing well.

Seeing those family members that you rarely get to see. If we are active on the internet, we can keep up somewhat but, I am so tired some nights when I get home that I don't want to look at the computer. Besides, seeing the family in person is so much better.

One great thing about going home for the holidays is getting to see the babies that have been born and listening to the kids tell their stories, watching the kids play, learning of family members who may have a new illnesses and wondering why? There have been several people pass away this year that I have known for as long as I can remember having a memory. It is strange to go home and them not be there.

My grandmother's home has a lot of land and it's a sort of tradition if it's not too cold, we go for a walk in the woods and walk down to the pond. It is not uncommon to see deer or run upon some deer. It is a great way to hang out with the cousins and see some beautiful scenery at the same time.

Ingredients

  • 1 1/2 lbs. beef stew meat, lean
  • 1 tablespoon cooking oil
  • 2 cups fresh mushrooms, sliced
  • 1/2 cup green onions, sliced or
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon oregano, dried, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon thyme, dried
  • 1/4 teaspoon black pepper
  • 1 (leaf) bay leaf
  • 1 1/2 cups beef broth
  • 1/3 cup dry sherry, optional
  • 1 (8oz.) sour cream, carton
  • 1/3 cup all purpose flour
  • 1/4 cup water
  • 4 cups hot cooked noodles, or
  • 4 cups hot cooked rice
  • 2 couple of stems fresh parsley, snipped, optional

Prep time: 30 min
Cook time: 8 hours
Ready in: 8 hours 30 min

~Cook Time Extra~

Since this is a slow cooker recipe, on low heat in the slow cooker, cook for 8 hours or, if you choose to cook on high the cook time is reduced to 4 hours 30 minutes.

The slow cooker or crock pot needs to be 3 1/2-4 quart.

Just a tip** Most all slow cookers vary just slightly from different model to different model. So, be sure to check your cooking time before you get started. You might even want to try your crockpot for the first time, while you are going to be home. This will allow you to how your crockpot operates. (For instance, mine boils on low). I would have never known unless I was at home to watch my crockpot while I was at home.

Instructions~Super Easy

  1. Cut up any large pieces of stew meat. In a large skillet brown the pieces of the beef stew meat one half of the package at a time, in hot oil. Drain off the fat.
  2. In a 3 1/2-4 quart slow cooker or crock pot, place the mushrooms, onions, garlic, oregano, salt, thyme, pepper and bay leaf. Add the stew meat. Pour beef broth and sherry all over.
  3. ***I am taking a time out here to say that of course you can change this recipe up to your liking.*** My family for example doesn't like mushrooms and I thought for this particular group of family members I am cooking for that I would just leave off the sherry.
