Easy Does It Black Beans and Rice

Need dinner on the hour ago?? Whenever I'm pressed for time, cooking is the last thing I feel like worrying about. I want something quick and easy. So, when a friend showed me how to make his no-fail black beans and rice, I latched onto the recipe, and I've held on tight ever since. It is my fast and fabuloso go-to dish.This recipe is easy-peasy and and the result is deliciously divine.

Serve these beans in a bowl topped with sour cream and shredded cheese, or throw them in a tortilla and add a few of your favorite toppings (may I suggest diced jalapenos). Voila- dinner served!

Yields: 4 Servings


  • 1 cup (uncooked) instant brown rice
  • 1 jar salsa, 24 oz (you choose spice level- we like HOT)
  • 2 cans rinsed and drained black beans
  • 1 diced yellow pepper, (optional)
  • 1 small diced yellow onion, (optional)
  1. Cook instant rice according to box.
  2. While rice is cooking, warm a teaspoon of olive oil in a deep pot. Chop pepper and onion, throw in pot with warm oil and saute away!
  3. Rinse and drain two cans of beans. Add to cooked rice.
  4. Empty entire jar of salsa into the rice and bean mixture. Stir.
  5. Add sauteed pepper and onion. Stir again.
  6. Cook on low heat for 10 minutes.
  7. Top with a sour cream, shredded cheese (and jalapenos if you dare!)
  8. Serve with tortilla chips as an appetizer or in a bowl as a main dish.
