One of the things that I like to do is sit and look through my cookbooks for "fun" as my mom says. She thinks that it is funny, like this is my entertainment.
I can look through the recipe books and I like to try to find a recipe that meets certain criteria. One of the things that I look for is: Do I have everything that is needed for the recipe? This can make a big difference when deciding on what to make. If you have to go out and buy several ingredients versus just opening up your pantry door and simply taking out what you need to make your new found recipe. When I make a new recipe I always make it just as the recipe calls for. Then if the recipe is kept then I will make adjustments then if I want to. If I come across a recipe that I can't wait to fix and I don't have all the ingredients, then I will put that one near the top (because, I do want to to try it). It's just that I do not have everything. That's just a weird quirk of mine!
If the recipe is a "success or a keeper," in my book, then I will transfer the recipe to another recipe book where my favorite recipes are kept.
Having a successful recipe to me means that it's easy to make, has a pretty presentation or it's something I could see myself making again. I also like to make sure that my family likes the recipe as well. They have a lot of say so in whether the recipe is kept or not. I just like to try the recipe as it written out the first time. If there are things that I think I could do to make changes to improve a particular recipe, I will make a note of that in my book, or on my recipe card to remind myself to try it the next go-round.
When I think about making baked chicken, I do not normally think of using feta cheese. The feta cheese adds a different tasting cheese than what we do not normally eat. This is a very easy, elegant looking dish. This would be nice to serve as a nice dinner for you spouse at home, or it's good to serve as a baked dish that you could serve, when there is company coming over.
The feta cheese is a nice twist to the baked chicken. Feta cheese has it's own unique flavor. It has a little bit of a tart flavor. If your not a fan of feta, you can substitute it for another crumbled cheese such as crumbled blue cheese for a different twist of flavor. Either way it's very tasty indeed.
- 6 boneless chicken breast, halves
- 2 tablespoons lemon juice, divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (4oz) package feta cheese with basil and tomato, crumbled
- 1/4 cup red pepper, chopped

- Preheat the oven to 350 degrees.
- Arrange the chicken in a 13 X 9" baking dish. I think that this dish would be pretty in a glass baking dish if you have one.
- Drizzle with one tablespoon of the lemon juice. Season the dish with salt and pepper.
- Top with the feta cheese and drizzle with remaining one tablespoon of lemon juice.
- Bake the chicken for 35-40 minutes of until the chicken is cooked through. Sprinkle with red pepper and parsley. Fresh parsley is always the best in my opinion.
- You could just add basil and leave out the tomatoes if you just use the plain feta cheese.

I Love Chicken
I am always looking for different recipes to try and when I found this recipe, I fell in love with it immediately. The bursting flavor of the feta cheese is a great addition to the chicken. Only recently have I come to like feta cheese. This opened up a whole new world of flavors. Now I can truly appreciate this crumbly white cheese. The feta cheese has a unique flavor all of it's own.
This is an easy recipe to make and it is elegant to serve on a plate. This is a great recipe for a dinner at your home when you have company coming. It is also good to serve for your parents or in-laws if they are coming to dinner.
The use of fresh parsley from the garden, in this recipe, makes a world of difference. Plus, it is just neat to be able to know that you grew the parsley and you are able to just go out your door and pick a little bit off of your parsley plant.
Some suggestions for some side dishes with this recipe could be garlic mashed potatoes, a Cesar or tossed salad, bread (of course), corn, steamed broccoli or other steamed vegetables. The very first picture of the hub shows the feta chicken served with steamed asparagus. This makes the feta cheese and the tomatoes really stick out in this recipe.
