How to Make Orange Chicken
I always like to cook meals that are quick, easy and that use up leftovers. I always seem to have leftover rice (probably because my husband makes so much). Leftover rice is great for fried rice. With fried rice my kids love to have Orange Chicken and once you get the hang of making both of them they are truly quick and easy. There are also many shortcuts that you can use with both of these dishes like making the rice ahead of time for the Fried Rice and buying chicken that is already cubed and frozen for the Orange Chicken.
3 Cups Cooked Rice Cooled (Leftover rice is perfect)
1 Bunch of Green Onions Chopped
1 Small Package of Frozen Peas and Carrots
1 Egg Beaten
1 Cup of Meat Cooked and Chopped (I like Barbeque Pork)
¼ cup of Soy Sauce (This can be adjusted to taste)
Garlic, Salt and Pepper to Season
Olive Oil (Garlic Oil works well too)
Make rice ahead and let cool. In non-stick skillet or wok pour about 2 tablespoons of Oil in the pan and fry the rice and green onions. Once the rice is warm and the onions are soft push the mixture to the sides and add the beaten egg. Gently cook the scrambled egg and mix into the rice and onion. Add the soy sauce and seasonings and mix. Finally add the frozen vegetables and meat and cook until heated through.
4 – 6 Boneless, Skinless Chicken Breasts Cubed
2 Tablespoons Water (Can substitute with Chinese Rice Wine or Rice Vinegar)
1 Tablespoon Cornstarch
1/3 Cup Orange Juice (if this is too strong replace some of the OJ with water)
1/4 Cup Brown Sugar
2 Tablespoons Soy Sauce
½ Teaspoon Ginger minced
¼ Teaspoon Garlic minced
¼ Teaspoon Red Pepper Flakes (for a bit of kick)
Olive Oil (Garlic Oil)
Place the cubed chicken in a bowl. Mix water and cornstarch together in a separate bowl and pour over chicken. Mix together so that chicken is coated and let chicken sit for about 30 minutes. Mix together sauce ingredients except the garlic and ginger. Heat up skillet or wok and add 2 Tablespoons of oil. When hot add garlic and ginger and lightly fry. Add chicken and fry until brown. Push chicken to the sides and pour the sauce in the middle. Mix chicken and sauce together until both are hot. Serve.
These recipes are relatively easy and you can switch the ingredients around to suit your taste. You can add different vegetables and meats or seafood. So try something new tonight and make your own fried rice and orange chicken.
