What is a Pierogi?

Pierogi are little potato dumplings. They're crescent shaped, made of thinly rolled dough. and can be filled with potato, onion, cheese or garlic. They taste like a potato filled ravioli. YUM! They are delicious and kids love them!

Pierogi is a Polish dish, made in a manner similar to ravioli. Traditional pierogi can be sweet, spicy, or savory.

In this recipe I'm using frozen pierogi which is available at most stores. It's simple and affordable. Top it with some chunky lamb gravy, pesto, or any sauce your family likes!

Endless Possibilities

There are so many different ways you can prepare this layered casserole!

Each of the following recipes have identical cook times and instructions. They each use one bag of potato and onion filled frozen pierogi, and one bag of frozen mixed vegetables. I use organic ingredients but of course use whatever you prefer. You can easily make this vegan too.

Chicken Pesto Recipe

INGREDIENTS:

  • 1 tsp olive oil
  • 2 tbsp chicken broth or water
  • 1 package pierogie
  • 1/2 an onion
  • 1 bag frozen mixed vegetables
  • 1/2 cup olives, cut in half
  • 1 1/2 cup shredded, diced or sliced chicken breast
  • 1 bulb roasted garlic or 1-2 cloves raw garlic, diced
  • 1/4 - 1/2 cup pesto to taste
  • 1/4 cup parmesan cheese
  • salt and pepper

Ham and Spinach Recipe

INGREDIENTS:

  • 1 tsp olive oil
  • 1/4 cup chicken broth or water
  • 1 package pierogie
  • 1/2 an onion
  • 1 bag frozen mixed vegetables
  • 2 cups fresh spinach
  • 1 1/2 cups diced ham
  • 1 bulb roasted garlic or 1-2 cloves raw garlic, diced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • salt and pepper

Instructions

  1. Preheat oven to 375 degrees.
  2. Start the water boiling for the pierogies.
  3. Heat up the olive oil over med/high heat in a heavy pan. After a few minutes, add the onions. Cook one minute, then add the frozen veg (and olives). Cook another minute. Drop the heat to med/low and cover for 5 minutes.
  4. Meanwhile, your water should be close to boil. You don't want a high boil because you might break the pierogie. Once the water starts to boil, turn the heat down to medium. Then using a slotted spoon, slowly add the pierogie a few at a time. Give them a gentle stir. They will take 8-10 minutes to cook. They will float to the top and look "pillowy" when done. Stir them gently every few minutes so they don't stick together.
  5. You vegetables are either done, or about done. So give them a good stir. Add the meat and garlic, salt and pepper, and any other spices.
  6. Pesto Chicken: Spoon your pesto over the top of your veg in clumps. Cover, remove from heat, and let sit a good 5 minutes.
  7. Ham Spinach: Lay your spinach on top of the vegetables. Sprinkle a little salt over the top of the leaves. Cover, remove from heat, and let sit a good 5 minutes.
  8. The pierogies should be floating on the top of your water by now. So gently spoon them into a colander or drain bowl.
  9. You'll need either a rectangular or round glass baking dish. Layer 1/2 of the cooked pierogie onto the bottom of the dish. Salt and pepper them. Spoon half of your vegetable mixture over the top. Sprinkle with cheese. Layer the remaining pierogie, salt and pepper, vegetables and cheese.
  10. Cover the casserole and bake for 20-25 minutes until heated through and the cheese is melted. Serve with some green beans, a nice salad, or even some chicken breast!
