Easy Meals For Busy Families - Ham & Spinach Quiche

I'm a busy person. There are days when I'm swamped with work, cleaning around the house, & tending to my family that I don't always have the time to put out a grand meal like I like to. My family always appreiates anything I put out, knowing I still managed to put something on the table that wasn't premade and/or from a box. And although I do enjoy going out to eat, I love eating in the comfort of my own home even more. On days when I don't have the most abundant amount of time, I always appreciate the recipes I've been given or found online that are quick and easy. This was one of those recipes I had found, but tweaked a little to make it even more efficient on time and effort. I hope you'll enjoy it as much as my family and I do.


5 Large Eggs, beaten

1 1/4 Cups Heavy Cream

Salt and Pepper

1 1/2 Cups Chopped Spinach, packed (I buy the frozen type and leave it in the fridge to thaw overnight. You can use fresh spinach if you prefer)

1 Pound cooked Ham, chopped (I purchase one of those Ham steaks and chop it up. It cuts down on having to cook one more thing)

1 1/4 Cups shredded Swiss Cheese

1 (9-inch) refrigerated Pie Crust


Preheat oven to 375 degrees F.

Combine the Eggs, Cream, Salt and Pepper. You can use a food processor or blender to make things faster. Layer Spinach, Ham, and Cheese in the bottom of the Pie Crust. Pour Egg mixture evenly across the top of the other ingredients. Bake for 35 to 45 minutes until the Egg mixture is set (You can check using a toothpick stuck into the center. If it comes out clean, it's done). You can cut it into as many wedges as you need. The suggested amount of wedges was 8.
