Easy Muffin Recipes

Banana Muffin Recipe

Ingredients

3 large bananas

1 egg

3/4 cup sugar

1/3 cup butter

1 tsp baking soda

1/2 tsp salt

1 1/2 cup flour

Method

Firstly mash bananas, add sugar and slightly beaten egg and mix well. Stir in melted butter and lastly mix in the combined dry ingredients. Bake for 20 minutes at 190 degrees C.

This recipe is a good one to convert to gluten free as the bananas keep the muffins moist and it only contains baking soda as its raising agent which is gluten free. A big problem with gluten free baking is the dry texture especially after a day or so. There are many commercial gluten free flour mixes available nowadays or you could try this one which I found some years ago when I was doing some gluten free baking.

Gluten Free Flour Mix - by Bette Hagman

2 parts white rice flour

2/3 part potato starch flour

1/3 part tapioca flour

Add a teaspoon of xanthan gum per cup and this flour can be used for almost any recipe requiring white flour.


Very Quick Muffins

1 cup flour

2 tbsp golden syrup

1 cup milk

1 tsp baking soda

1 cup bran

pinch salt

1 egg

Method

Mix flour, bran, salt, golden syrup and egg in a bowl. Dissolve soda in milk and add to mixture Mix well. Mixture looks sloppy.

Cook for 15 - 20 minutes at 180 degrees C . Makes 6 large muffins.


Ginger Muffins

1 cup flour

2 tsp baking powder

1/2 tsp salt

2 tsp ground ginger

1 cup milk oaties or rolled oats

1/4 cup sugar

2 tbsp golden syrup

2 tbsp melted butter

1 egg beaten

Method

Sift together flour, baking powder, salt and ginger.

Mix in milk oaties and sugar.

Combine milk, golden syrup, butter and egg.

Pour onto dry ingredients and mix only enough to moisten.

Fill well greased muffin tins 2/3 full.

Bake 10 - 15 minutes at 200c until well risen and golden brown.

Serve hot with butter.

      Both of these recipes sound pretty good. I think I would make them into a loaf though, because I'm lazy. Muffins are lovely and I enjoy them as do most people, but I like them best when somebody else makes them. I just want to pour the batter into a loaf pan and into the oven. I'm curious to see how the ginger muffin recipe will turn out as a loaf . . . ;)
