Easy Pancakes

These are quick

If you like pancakes as much as my family you might want to use this recipe I grew up with.Here are a few tips before you begin:

Use a cast iron skillet for best results. Oh and sift the flour for light pancakes. Also if your eggs are not room temperature put them under some hot running water for a few minutes before you use them.

Cook time: 15 min
Ready in: 20 min
Yields: one batch is about 8 pancakes

Ingredients

  • 1 cup flour, unbleached, sifted
  • 2 teas. baking powder
  • 1 tabs. sugar
  • 1 teas. vanilla, optional
  • 1 cup milk
  • 1 egg, room temperature
  • 1 tabs. cooking oil
  • dash salt, kosher

Instructions

  1. sift flour into a bowl, add salt, baking powder, and sugar. Gently combine, put a well in the middle
  2. add milk and egg, mix well until there are no lumps, you may use a mixer if you have one. Add oil and mix it in
  3. prepare skillet, you want it to sizzle when you coat it with oil or butter. But you do not want it to hot. If the butter burns it is to hot. Once it sizzles pour your batter in the skillet the size you want your pancake to be. Once you see bubbles all over in a manner of seconds flip it witha spatula.let it cook for about 4 to 6 seconds. Take it out and repeat with remaining batter. top with melted butter and your favorite syrup. Serve warm

      Nice recipe. I also like to use sea salt, as it leaves a tiny little tasty crunch in the pancakes. Thanks!
