Pepperoni and Cheese Heaven!

WOW!! That is what comes to mind when I think about these quite large pizza bites. They are very simple to make and I have a hard time believing that anyone wouldn't like these. These are great for kids, if you do not put in the onions. (I would imagine that most children wouldn't like onions). Who can go wrong with a biscuit, cheese, pepperoni and pizza sauce? It tastes delicious and it is so simple to make. Adults and kids will love this appetizer.

This has easily, hands down become a favorite recipe of mine. This came from a cookbook that my mom bought for my "hope chest." when I was a teenage girl. The name of the cookbook is the Better Homes and Gardens New Cook Book. This particular cookbook was published in 1989. This is where food was prepared the "old fashioned way". This to me is just a fascinating cookbook to read and enjoy. Each of the recipes have their own story to read and learn about the recipe. To see the pictures of the test kitchens, wow, what a dream job, to test food all day long and to take photographs of the finished product for the cook book. Pepperoni is much more than just a pizza topping and it can be used in a lot of different recipes. The pepperoni bites are not the same without pepperoni in the biscuits. The pepperoni as well as the pizza sauce are combined to give these biscuits there pizza taste.

If you want your pepperoni really crunchy, you can put the pepperoni in the oven for a few minutes to bake. Bake the pepperoni until your desired crispiness. This puts a little bit different spin on the pepperoni.

With this recipe, you can just use the basic pepperoni, sauce and cheese or you could add extra sauce and add green bell peppers, sauteed onions, sausage. Whatever you would normally eat as toppings on your pizza, is what you can put in these tasty pizza bites. This will probably require you to have additional biscuits so that you don't have too much stuffing for the biscuits. You can use canned biscuits. This is the trick to getting the biscuits all the same size. It will be tempting to put a lot of filling into each biscuit but, if you will just put about one teaspoon or less in each biscuit, when the biscuits are baking the stuffing will not burst out of the bottoms or tops of the biscuits.

You know there's that saying, "you get what you pay for", it goes without saying that this is how it is with these biscuits. If you buy the canned biscuits, you can buy the cheaper biscuit and put a little less of the stuffing in each biscuit or you could buy the little bit more expensive, larger biscuit and then you don't have to be quite so careful with the filling.

You then brush the biscuits with milk before they are baked, this will make the biscuits golden brown when baked. Sprinkle each biscuit with parmesan cheese. The parmesan cheese will get slightly browned as well. These are so good. If you wanted to, you could actually cut the finished pizza bite in 1/2.

I have served these biscuits at appetizer parties, football get-to-gethers, church functions, work parties and many other parties. They are simple to make and they travel very well. There are rarely any left to bring home. You will be asked all night, just how did you get that wonderful filling inside the biscuit. By the time that you put the filling in the middle and pinch the edges and sides together, you bake that side down, it's hard to imagine that these are so easily made.

Pepperoni is much more than just a pizza top and it can be used four many recipes. I like it on Italian style subs along with ham and bologna and other Italian meats. These pepperoni bites are not the same without pepperoni in the biscuits. The pepperoni as well as the pizza sauce are combined to give these biscuits their pizza taste. If you want your pepperoni really crunchy, you can put the pepperoni in the oven by itself on a pan. Leave it in the oven for a few minutes to bake. Watch closely but, cook to your desired crispiness. This puts a little different spin on the pizza.

Ingredients

  • 1 cup mozzarella cheese, shredded
  • 1/2 cup pepperoni, chopped
  • 1/2 cup pizza sauce
  • 2 packages refrigerated biscuits, (10 in each package)
  • 1 tablespoon milk
  • 1/4 cup parmesan cheese, grated

Instructions

  1. For the filing, in a bowl combine mozzarella cheese, pepperoni and pizza sauce. Set aside. Separate the biscuits. Flatten the biscuits to 3 inch circles. Place about 1 rounded tablespoon of filing in the center, of each biscuit or circle. Bring the edges of the dough together, sealing the filling inside the biscuits. Pinch to seal.
  2. Place the seam side down on a greased baking sheet. Brush the biscuits with some milk and then sprinkle each biscuit with parmesan cheese. Bake in a 350 degree oven for 12-15 minutes or until golden. These are better if they are served warm. Makes 20.

      Nice, these are very similar to "Pizza Man", Like pizza toppings inside a steamed Chinese dumpling which are actually sold in many convenient stores in Japan.

      Sounds yummy and easy to make. Always handy for so many occasions! Any idea what we could use instead of the biscuits as we don't have them in Ireland or UK as far as I know? They seem different to other biscuits mentioned from the US in recipes. Voted up +++ shared!
