Easy raw vegan salad

This delicious cauliflower couscous salad is amazing. Couscous is of course delicious in a salad however, if you are living a raw vegan lifestyle you probably won’t be able to eat couscous. This cauliflower alternative is perfect for people who cannot eat real couscous. This is a fresh, summery yet very filling salad to try on a summer afternoon. I tried this delicious dish one very cold afternoon actually, I had no idea I would like it so much so I didn’t actually record anything visually. Although, I wish I had now. I will next time I get the chance to make it, and I will probably put together a video to go with it. In the meantime, here is the recipe and hopefully you will get the chance to try it out.


2 cups cauliflower, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 tablespoon fresh parsley

1 tablespoon fresh mint

1 tablespoon fresh cilantro

1 ½ tsp cumin

¼ cup chopped black olives


1. To make the couscous, take the chopped up cauliflower and put it in a food processor with an S blade. Process the cauliflower until it resembles couscous. Set it aside.

2. Now, you can make the dressing for this, take a large mixing bowl. Add the olive oil, lemon juice, parsley, cilantro, fresh mint and cumin. Whisk everything together to form a dressing.

3. Sprinkle the olives into the couscous and mix together.

4. Drizzle the dressing on the couscous and serve. Done!

You can add cucumber, red peppers, chilli and other ingredients to this delicious couscous salad. Enjoy!
