Cook Time

Prep time: 30 min
Ready in: 30 min
Yields: 15 individual servings

  • 16 ounce can refried beans
  • 8 ounces sour cream, divided
  • 8 ounces guacamole
  • 8 ounces salsa
  • 8 ounces cheese, grated
  • 16 ounce can petite diced tomatoes, or fresh
  • 1 small can diced green chiles
  • 1 can black olives, optional
  • chopped onion or scallions, optional
  • lettuce, optional

Prepare in 30 minutes or less

  1. Mix refried beans with 4 ounces of sour cream and put a large spoonful in the bottoms of 15 9-ounce wide plastic cups.
  2. Layer 1 tablespoon each of the following on top of the bean layer, smoothing to the edges: sour cream, guacamole, salsa, grated cheese, and canned or fresh tomatoes.
  3. If desired, you can also add: black olives, chopped onion or scallions, and lettuce in place of or in addition to other toppings.
  4. To make assembly easier, place all empty cups on large cookie sheets. When finished building dip cups, wrap the entire cookie sheets with plastic wrap and place into refrigerator until party time.
