Easy Tomato Soup Recipe

I love soup, especially tomato soup! But, I usually don't have time to make a complicated recipe. This easy tomato soup recipe hits the mark at our house because it is quick, inexpensive and tastes great. Double the recipe below and freeze individual portions.

INGREDIENTS

2 Tablespoons Olive Oil

1 cup onion (1 medium sized onion)

2 teaspoons garlic (about 2 cloves)

1/2 teaspoon salt

2 14.5 ounce cans Whole Tomatoes

1 cup milk

DIRECTIONS

1. Chop onion into small pieces.

2. Mince fresh garlic.

3. Add olive oil to medium-sized saucepan.

4. Add onions, garlic and salt to saucepan and saute over medium heat for 5-10 minutes.

5. Add onion mixture and whole tomatoes to a food processor and puree.

6. Pour combined onion and tomato mixture in saucepan.

7. Heat mixture over medium heat.

8. Add 1 cup of milk and continue heating, but do not boil.

9. Ladle into soup bowls or storage containers.

Yields about six 1-cup servings.

TIPS AND SUGGESTIONS

Garnish with croutons, fresh basil or dill just before serving, if desired.

To heat easy tomato soup from frozen, place soup in a microwave safe bowl. Cover and heat on high for 2 minutes. Stir. Re-cover and cook for approximately 2 minutes more or until heated through.

Use skim milk for a low-fat recipe or rice milk for a dairy-free recipe.

      Hi! This soup is on the sweet side due to the milk that is added and does not taste full of preservatives like canned soups. It has a home-made taste. If you use fresh tomatoes, it is completely natural!

      This is on my list of "tries" for recipes. I have one that uses fresh tomatoes, but takes a bit of time (I peel the tomatoes by hand). To have a quick and yummy recipe is the best! Thanks for sharing this!
