"An Amazing Italian Dish!!"

If you do, decide to make this soup, please do not let it intimidate you. It has different ingredients, but, it turns out to be the most wonderful soup .The first time that I made it, I thought it was so easy. The best thing is, you should mostly have everything made ahead of time (so the when the flavors have time to blend, it only gets better. Once again, when you begin to make this soup don't let it scare you. This is one of my favorite, of the easiest, tastiest soups in my opinion. I can't say enough about this sou.

If you are having a Italian themed dinner, and having several courses, this is great to use as your soup of the evening. A lunch for the girls would be fun as well. It would be fun to serve some older ladies from the church, maybe some widowers. It is amazing how it can make you feel to have someone serve lunch for you. It just makes you feel really special. I always think of the elderly when I want to do something nice for someone.They just seem to be people that time has seem to forgot. Especially if the ladies are widowers. It really means a lot to the elderly when you do something nice for them.

Break out those nice dishes that you never get to use. You can put those soup bowls, bread plates and dinner plates to good use. Even if you are not having company. Surprise your family. It is worth it. Somehow we have lost that connection of family time at the dinner table. You are thinking, I am lucky if I can even my all of my family in one spot for five minutes much less a meal! It may take some work but, family time is really important.

Serving this soup along with a big thick crusty Italian bread and crackers on the table. This soup followed by a house salad with Italian dressing or a Caesar salad. You could also serve this recipe as entire meal.

Then, I also like to butter some bread or put cheese on it and melt it in the oven or you could serve it for your company.

This is a great meal waiting to happen or use this soup as an appetizer. I have to admit, I am a fan of soup to begin with. My favorite two soups are potato soup and tortellini soup. One thing that is unique about tortellini soup is the seasoning which consists of, basil, onions, garlic, mushrooms and grated parmesan. Whether you are a fan of soup or not, this Italian delight will satisfy your craving. This is a great soup to have on a rainy day or on a cold day.

The most expensive thing that is in this recipe is the tortellini. I always just buy the frozen tortellini and this always works just fine.

Ingredients

  • 1 teaspoon olive oil
  • 1 large onion, chopped
  • 1 teaspoon bottled garlic, minced
  • 1 package (8oz) fresh mushrooms, sliced
  • 2 cans (14.5 oz) seasoned diced tomatoes such as garlic and onion
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon basil, dried
  • 1 bag (14oz) cheese tortellini, frozen
  • as much as you want or, to taste parmesan cheese, grated

Instructions

  1. Heat the oil on medium heat in a dutch oven or soup pot. Peel and coarsely chop the onion adding it to the pot as you chop.
  2. Add the garlic and cook it stirring occasionally, until the garlic is tender about three minutes.
  3. Add the mushrooms if desire, and cook until they begin to release their liquid or about two minutes.
  4. Meanwhile, open the broth and tomato cans. Add the broth and tomatoes and raise the temperature to high heat cover the pot to bring the soup to a boil.
  5. Lift the lid briefly to add the Worcestershire and basil. When the broth comes to a rolling boil, add the tortellini. After the broth comes back to a boil, continue to cook 3-4 minutes or just until the tortellini are tender.
  6. This soup is best served as soon as the tortellini get finished cooking. Parmesan cheese may be served on the side of the soup and just let your guests add it to their soup if they would like to.

Winter Soup

Whenever I flip through my recipe book while drinking a cup of coffee and looking over this book, I am always intrigued when I come across this recipe. I try to keep some tortellini on hand and I usually have the other ingredients already. It is just simply a great recipe to add to your favorites.
