Super-easy pasta with tomato and basil

Updated on April 5, 2011

The scent of love!

I'd like to quote one of my friends: 'Whenever I smell basil, I think about love. Many years ago I went to Italy with my then fiancee, now my husband, in the month of July. Everywhere there was the scent of basil- in windows, in the market, in the small restaurants. It saturated the city and made me forever connect basil with love, since I was there with the man I wanted to marry!'

Maybe we don't have these strong connections with the smell of basil, but I can honestly say I LOVE BASIL! I can eat it with anything, it's so delicious. These days we can get basil any time of the year, but now it is the season and it is even more available. It goes so well together with tomatoe, and the cheese makes the dish a bit more filling.

This recipe is super-quick and easy to follow:

Mix all the chopped ingredients together.
Mix all the chopped ingredients together.
Add the boiled pasta, and serve!
Add the boiled pasta, and serve!

Do like this!

Start out with boiling the pasta, it is best with the shorter kinds for this dish. I chose penne, but fusilli or farfalle would also do well.

While the pasta is boiling, chop tomato in smaller pieces - one tomato per person. Do likewise with any cheese of your choice. About half a cup per person would be enough. Toss it together with olive oil (EVOO) and salt in a serving dish. Add fresh, shredded basil, a handful or more.

When the pasta is ready, add it to the dish. Enjoy! It doesn't have to be more difficult than this to enjoy a delicious pasta dinner with basil.

Back in the day, in college, my rieooms and I used to watch 90210 every week. Whenever David Silver came on, with his keyboard, his singing, playing in a band or God help us, rapping, we'd hide or shut it off! Not b/c he was awful (he wasn't bad and given the chicks BAG has snagged off screen, he must have a little somethin' somethin') but b/c he thought he was soooo great. And all the actors and musicians they'd have on had to tell him yeah David, you the bomb, you got it goin' on . David Silver, musical prodigy, it was cringe worthy.Melissa Gorga is the new David Silver and Souldiggaz are the actors hired to boost her ego! She's not awful, but I have to say, Teresa has a point, anyone can sing these days. And really? They can. Thanks to Autotune, even I could be a one hit wonder. She is really thinking she's a big talent. Souldiggaz must be laughing. On the inside.Another one Melissa reminds me of is Heidi Montag. First, I am loathe to admit it, but I learned on Newlyweds: Nick and Jessica that even if you have a recording contract, you have to front all of the money to get a record done and produce videos etc. You get reimbursed on the backend. Now maybe Mariah, Celine and Cher don't at this point, but it's Nick Lachey and Jessica Simpson. So, someone like Melissa would have to front every penny (well, Joe would) to make this album, hire Chris Judd (who isn't cheap), pay Souldiggaz, photo shoots etc. It reminds me of Heidi Montag b/c when she wanted to sing (and she wasn't totally awful either, Melissaish w/ Autotune. See, anyone can sing these days..) her and Spencer spent millions of dollars so Heidi could follow her pop star dream. She wanted to be Britney. Google it, there's articles about it from a few years ago.So, I see Melissa and Joe ending up like Heidi, millions of dollars and a quite embarrassing performance on Miss Universe later, almost nobody bought the album. Reality show people have as much respect in the music industry as I do! But, they always have the gays, On Display is probably huge on Fire Island. They get the campiness. They aren't making money on this and poor Mel isn't going to be a pop star. Even David Silver and Heidi gave up. At least Kim and LuAnn are in on the joke! The only singing HW's less self aware then Melissa were Danielle and Michaela Salahi! EW had this to say:
