Super-easy pasta with tomato and basil
The scent of love!
I'd like to quote one of my friends: 'Whenever I smell basil, I think about love. Many years ago I went to Italy with my then fiancee, now my husband, in the month of July. Everywhere there was the scent of basil- in windows, in the market, in the small restaurants. It saturated the city and made me forever connect basil with love, since I was there with the man I wanted to marry!'
Maybe we don't have these strong connections with the smell of basil, but I can honestly say I LOVE BASIL! I can eat it with anything, it's so delicious. These days we can get basil any time of the year, but now it is the season and it is even more available. It goes so well together with tomatoe, and the cheese makes the dish a bit more filling.

Start out with boiling the pasta, it is best with the shorter kinds for this dish. I chose penne, but fusilli or farfalle would also do well.
While the pasta is boiling, chop tomato in smaller pieces - one tomato per person. Do likewise with any cheese of your choice. About half a cup per person would be enough. Toss it together with olive oil (EVOO) and salt in a serving dish. Add fresh, shredded basil, a handful or more.
When the pasta is ready, add it to the dish. Enjoy! It doesn't have to be more difficult than this to enjoy a delicious pasta dinner with basil.
