Egg and Cheese Stack
I found this recipe in a magazine years ago when my kids were little. Since we don't all eat breakfast at the same time I've always made this for supper. It's quick, easy, and tastes great.
- 6 eggs
- 6 tortillas
- 1 cup shredded cheddar
- Preheat oven to 375. Cook eggs until set, stirring occasionally.
- Place 2 tortillas on bottom of 9 inch pie plate. Top with 1/2 of the eggs and 1/3 of the cheese. Repeat layers.
- Top with the last 2 tortillas and sprinkle with remaining cheese. Bake 10 minutes. Cut and serve.
