Eggnog Cheesecake Recipe

This is a good cheesecake recipe, for the holidays or any time of year. Hope you enjoy it.


2 cups vanilla wafer crumbs
3 tablespoons rum
6 tablespoons margarine, melted
1 teaspoon vanilla
1/2 teaspoon ground nutmeg
2 whole eggs
4 8 ounce packages cream cheese
4 egg yolks
1 cup sugar
1 cup whipping cream
3 tablesoons flour


Mix crumbs, melted margarine and nutmeg. Use 9 inch springform pan. Press crumbs onto the bottom and up 1/1/2 inches of side of pan. Bake at 325 for 10 minutes.

Beat cream cheese, sugar, flour, rum, and vanilla at medium speed until well blended. Add whole eggs, one at a time, mixing at low speed after each addition, just until blended.

Blend in cream and yolks, pour whole mix into crust

Bake for 1 hour and 10 minutes or until center is almost set. Run knife around rime of pan to loosen cake, cook before removing the rim of the springform pan.

Refrigerate for at least 4 hours.
