Eggplant Chunks Deep Fried
Ingredients
- eggplant
- water
- salt
Coat:
- flour
- egg/water
- cracker crumbs
Deep Fryer:
- canola oil
Cracker Crumbs
Peel eggplant. Slice into finger thick chunks. Soak in salted water.
Prep for deep frying:
Take wet eggplant and coat with flour, then dip into egg/water mixture, then coat with cracker crumbs.
Deep fry for 4 minutes. Drain on paper towel.
