Delicious Zucchini Bread


Best Zucchini Bread EVER!

My beautiful Irish friend, Eileen, baked a loaf of this zucchini bread for my family and we just loved it so much I had to share her recipe.

EILEEN's ZUCCHINI BREAD (this recipe makes 2 loaves)

3 eggs
2 cups sugar
1 c. vegetable oil
2 c. flour
2 c. grated zucchini
1 t. baking soda
1/4 t. baking powder
1 t. salt
3 t. cinnamon
3 t. vanilla
1 c. chopped walnuts

Preheat oven to 325f.

1. Mix eggs, sugar, oil, vanilla and salt until creamy.

2. Stir in zucchini and add flour one cup at a time.

3. Add baking powder, baking soda, cinnamon and nuts- mix well.

4. Bake for 1 hour or until done.

These loaves can be kept frozen and they taste great when thawed. Nice to give to family and friends during the holidays, too! Thank you for reading!
