Delicious Zucchini Bread

Best Zucchini Bread EVER!

My beautiful Irish friend, Eileen, baked a loaf of this zucchini bread for my family and we just loved it so much I had to share her recipe.

I have to admit that I seldom bake, but when I do, it's usually during the cold weather months. This zucchini bread will fill your home with a yummy, spicy scent and will taste great with a cup of tea. Add a good mystery novel and you're all set to enjoy a winter's day!

EILEEN's ZUCCHINI BREAD (this recipe makes 2 loaves)

3 eggs
2 cups sugar
1 c. vegetable oil
2 c. flour
2 c. grated zucchini
1 t. baking soda
1/4 t. baking powder
1 t. salt
3 t. cinnamon
3 t. vanilla
1 c. chopped walnuts

Preheat oven to 325f.

1. Mix eggs, sugar, oil, vanilla and salt until creamy.

2. Stir in zucchini and add flour one cup at a time.

3. Add baking powder, baking soda, cinnamon and nuts- mix well.

4. Bake for 1 hour or until done.

These loaves can be kept frozen and they taste great when thawed. Nice to give to family and friends during the holidays, too! Thank you for reading!
