Eric's Corner Cooking: The Protein Burrito a Recipe for Disaster.

Sometimes we need to un beef up our protein.

Recipe with beans, rice, corn, cheese and maybe some meat. A burrito recipe but more important a recipe about burritos and too often life -- it gets refried. Asian steamed rice is often boring for a big fat white guy. Cheese is not for everyone some folks do not like it. Corn should never be made into a syrup or products for your hair.

But with all that said if you take some refried beans, corn or flour tortillas, roasted tomato salsa, goat cheese, and plain old rice you can make a treat. And satisfy all your needs for protein. Torn pieces of running chicken and/or some other meat rounds it out and gives some substance.


Ingredients

  • a bowl full Refried Beans, canned is fine/try black
  • a bowl full rice, any kind you like
  • enough goat cheese/your choice of cheese, this smells a lot
  • per taste fried tomato salsa, pick your poison
  • per taste Corn, Any kind or corn tortillas
  • Just a little Some kind of meat, optional
  • one Egg if you choose, soft boiled and mushed with rice

Hey this is fun, if you are on a clock -- about five minutes if you hurry.

Prep time: 1 hour 30 min
Cook time: 1 hour 30 min
Ready in: 3 hours
Yields: We do not need no stinking cook time

Do not ever cook alone, but if you must sashay salsa style as you cook.

I actually tested my dancing happy music theory on Spaghetti

Six tuesdays in a row I cooked spaghetti. Dancing and singing and some beverage for three. And like an unhappy freak for three. My family loved the "dancing" spaghetti and the other, they left to quickly to Jack in the box for me to ask.

If you do not play in life you are boring. If you do not play with your food while cooking your food is boring.

Burritos are cool bitchin food devices. You just lay out a tortilla put your junk in it and eat. But like all of life it is fun to change things up. Variety is the spice of life. You can fry them, bake them, wet them or leave em be. Nuking them creates a very malleable sticky thing that is kind of good if you want to rub brown sugar and cinnamon into them before toasting for a snack with you butter and coffee.

Yes I spoke of butter as a food unto itself, got an issue with that, call my cardiologist and complain.

I never fully appreciated eating until my son taught me.

Back to the protein burrito

If you combine, rice, beans and corn you make a perfect protein for your body. Toss in a small portion of meat and egg and flour and cheese and you have a super protein food.

Now how you put these together is your pleasure I pre heat them all a bit. And then spread them on the tortilla then melt the cheese on top and add a cool dollop or two of sour cream to go over the top.

My boy and I do not mind the later tunes. Yes that is the phonetic spelling of fart in Vietnamese. Or maybe we should say toons cuz we laugh like cartoons.

How about we wrap this up with a story about the tacos.

I had house down Rosarito Mexico way. Baja Malibu. Four families with a total of 13 children came for a long weekend. Us four men scooted out upon arrival to go into town and buy dinner and supplies. While getting the carne asada for barbeque I ran to get some local stuff like goat cheese and tequila. My three "friends" had our snack tacos ready when I got back to the cart that sold our meat. They gave me my plate of three as they were finishing theirs. Of course theirs were carnitas that we all loved. They tricked me and mine were ojos y cabezas -- brains and eyes. turned out they were good but everyone laughed as they told me what they were. Turned out the carnitas were good but the tomato and radish with them were very bad. That night as they lay dying or on the john I drank our margaritas with their brides and had a wonderful evening.
