Easy Loaded Chicken Breast Recipe - Extra Tasty Baked Chicken with Bacon, Mushrooms, Tomatoes
What is "extra tasty" chicken?
This chicken is called “extra tasty” because it is just that. Seriously extra tasty. My tastebuds go nuts every time I eat this dish. It has tremendous flavor with all the various ingredients that impart their own special flavors!
And the beauty of this tasty little gem is that I stumbled upon it totally by accident. I came up with this recipe when I was trying to dress up chicken breasts for a meal for my boyfriend. He isn’t crazy about just plain chicken, so I was trying to be more creative with adding tasty ingredients that would bring out the flavor. And guess what? He was thrilled about this dish. Great flavor! Let's have it again! Yeah, that's what I like to hear. As a result of the result (so to speak) of this chicken experiment, coupled with the admiration of my boyfriend who thinks chicken is boring, I have made this delectable several times since that first experimental time.
Sure, this recipe has some extra calories with ingredients such as cream cheese and bacon, but the taste is totally worth it. If you really feel you need to curtail some of the calories, use reduced fat cream cheese, use less of it, and opt for turkey bacon. You can also use reduced calorie cream of mushroom soup, adding water instead of milk.

Ingredients for Extra Tasty Baked Chicken
- 6-8 slices of bacon
- 4-6 chicken breasts
- 2 garlic cloves, minced
- 6 or more fresh mushrooms, sliced
- 2 Tbs. butter
- 8 oz. sour cream and chives flavored cream cheese, melted
- 1 10 oz can cream of mushroom soup
- 1 soup can of water or milk
- salt, pepper, garlic to taste
- 3-4 green onions, chopped
- Several cherry or grape tomatoes, sliced in half
- Several black olives, sliced
- 3-4 Tbs. chives, chopped
Instructions for Extra Tasty Baked Chicken
Cook bacon and put aside on a paper towel to drain. (You can't go wrong with bacon, right? Bacon makes everything better!) Save the bacon grease in the pan. Next, get 3 or 4 chicken breasts, depending on size, basically just enough chicken to fill your casserole pan.
Flatten the chicken breasts if they are really thick; the ones I find seem to come really extra-large (steroids?) these days. So get them to the desired size, and then brown them in the bacon grease with minced garlic. Place browned chicken in casserole pan. Sprinkle salt and pepper (I prefer sea salt and cracked pepper) on both sides of the chicken breasts. Crumble up that delicious bacon and place on top of chicken.
Sautee sliced mushrooms in bacon grease with a few pats of butter. Yeah, that's real butter. Put mushrooms over bacon on top of chicken. Melt the cream cheese (I nuke it!) and mix with the mushroom soup, can of water or milk, chopped green onions, and spices to taste. Pour mixture on top of chicken ensemble.
Add sliced black olives if desired. Cut cherry or grape tomatoes in half and put on top of chicken breasts. If you like tomatoes, they are a must. These cooked little gems really bring out the flavor. Yum!
Sprinkle this stack of love with more green onions and chives. Cook in oven at 350 until chicken is done—about 20-30 minutes. Oh, this dish is so delicious!

What to Serve with this Tasty Chicken Dish
What should you serve with this chicken dish? I've found a couple of perfect options. As the mushroom soup and other liquids combine to make a creamy and tasty gravy, this dish is excellent with rice. Cook up your rice, and plop a chicken breast on top with plenty of the gravy. Noodles--most commonly spaghetti or wide egg noodles--are also great with this dish. I would also be willing to try it with mashed potatoes. Whatever the choice of side dish to go with the gravy, it is sure to be an outstanding combination.
