Oatmeal Pumpkin Cookies

I love making these for my family. Great for an after school snack!

Yields: Makes up to 16-18 cookies


  • 2 Cups All Purpose Flour
  • 1 1/3 cup Quaker Oats
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon, ground
  • 1/2 teaspoon Salt
  • 2 sticks Butter
  • 1 cup Light Brown Sugar
  • 1 cup White Sugar
  • 1 cup canned Pumpkin
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  1. Preheat oven to 350° F
  2. In a medium sized bowl, combine the dry ingredients: flour, oats, baking soda, cinnamon and salt.
  3. Next, use a large bowl to mix the butter, brown sugar and white sugar, beat until light and fluffy.
  4. Then, slowly add in the pumpkin, egg and vanilla extract. Mix until all ingredients are blended well, then add dry ingredients. Mix well.
  5. Finally, drop spoonfuls onto your prepared baking sheet.
