Cook Once, Feed Over 10 People And Use Up Left Overs!

The Farmers's Breakfast Casserole is the easy way to feed a lot of people and only have to cook once! I am giving you the full recipe for 10 people. You will use a 13x9x2 casserole dish. If you want to make half that amount use a 11x7x1.5 casserole dish and cut the recipe in half. The dish that I am demonstrating is the smaller 11x7x1.5. This recipe is very user friendly, if you have left over cheese or onions or frozen sausage this is a great time to use them up. And any frozen hash browns or tater tots can also be substituted. Left over Velveeta also works (just make sure it is melted and mixed in well)!

Ingredients

1lb. ground sausage meat.(Vegetarians substitute one extra egg and 1/2 cup extra cheese)

1 medium onion diced

1/2 TBS minced garlic

10 eggs

4 cups sliced potatoes

2 cups cheddar cheese ( or Velveeta well melted)

1 1/2 cottage cheese (or ricotta)

1 1/4 cups monterey jack cheese ( or you favorite white cheese).

2 1/2 cups of fresh sliced mushrooms (*vegetarians feel free to leave out the meat and add an extra cup of mushrooms).

Salt and pepper to taste!

Directions

Saute the diced onions and sliced potatoes and add 1/2 Tbs. minced garlic in a pan thats been sprayed with butter flavored Pam and about 1/2 tbs of olive oil until they start to brown. Salt and pepper totaste! At this point put them on a plate and microwave them about 1 1/2 minutes(this will insure they are soft in the middle). Wipe out the pan with a paper towel, and spray the pan with a little Pam and finish browning the potatoes. Place in a large mixing bowl and set aside.

Next saute the ground sausage in a Pam sprayed pan, when about 1/2 brown add mushrooms, salt and pepper to taste and drain off fat. When browned, put in bowl and the combine all other ingredients, mix well! Spray a 13x9x2 casserole dish with Pam, pour in all ingredients and pat it down even. Then put the dish in a 350 degree oven for 1 hour or until firm and nicely brown. Allow it to cool at least 5 minutes before serving.

Serves at least 10 people!

      This sounds really good. I make breakfast concoctions like this alot. I just mix eveything I like together into a casserole and let it bake!

      This is a great way to get a nutrition in the morning! Once made, pop it in the microwave and in less than 2 min. you've got a full breakfast at the ready(just add toast)!
