These days everyone is busy. It seems as though there is never enough time to fix a delicious healthy meal anymore. You rush home after working all day, try to throw together a healthy meal for your family, do the dishes, and finally you can try to relax. It's not easy putting together a different, interesting, family friendly meal every night of the week. Help is here, I have included in this article 4 recipes for chicken lovers that are delicious, healthy, low fat, low cholesterol and full of fat burning foods. Hope you enjoy them.


Taco Chicken

Taco Chicken

Ingredients:

4 boneless, skinless chicken breast halves

1 pkg taco seasoning mix

1 cup chunky salsa

1 cup Mexican mix low fat shredded cheese

1/2 cup fat free sour cream

Instructions:

Preheat oven to 325 degrees.

Coat both sides of chicken with dry taco seasoning and place in large casserole dish. Pour in salsa, cover and bake for 25 to 30 minutes.

Sprinkle with shredded cheese and bake uncovered until cheese is melted.

Remove from oven and top with sour cream.

This dish is wonderful served with a green salad.


Raspberry Chicken

Raspberry Chicken

Ingredients:

1/2 cup sugar free raspberry jam

2 tbsp spicy brown mustard

2 tbsp honey

4 boneless skinless chicken breast halves

1 cup frozen raspberries, thawed

Instructions:

Preheat oven to 325 degrees.

Mix together jam, mustard and honey.

Coat chicken with jam mixture and place in large pan pre-sprayed with cooking oil. Cook for 30 minutes.

Heat thawed raspberries in microwave oven and serve over cooked chicken.

This dish is also great with a salad.


Cola Chicken

Ingredients:

4 skinless boneless chicken breast halves

1 cup salt free ketchup

12 oz can diet, caffeine free cola

salt substitute, to taste

Instructions:

Place salted chicken in a large frying pan and cover with ketchup and cola. It in not necessary to premix the two.

Bring to a boil. Cover and cook on medium-low heat for 45 minutes. Uncover and cook until sauce thickens.

A side of whole wheat noodles and a salad make this a delicious hearty meal.

Chicken asparagus

Chicken with asparagus

Ingredients:

4 boneless skinless chicken breast halves

1 can low sodium cream of chicken soup

1 1/2 cups 1% milk

2 cups uncooked brown rice

1 lb asparagus spears, cut into 2" pieces

Instructions:

In large frying pan cook chicken in 1 tbsp olive oil until cooked through, about 25 minutes.

Remove chicken from skillet. Add to skillet the soup and milk and bring to a boil. Stir in rice. Cook covered for 30 minutes on medium heat.

Add asparagus, lay chicken on top and cover. Cook on low heat for 15 minutes more on low heat.

All you need to do to make this a complete meal is add a vegetable.
