Feta Cheese and Garlic Dip

Feta Cheese and Garlic Dip

I am not sure where this recipe originated but I got it from my sister years ago. It is incredibly simple to make and is always a big hit at pot lucks or other get-togethers.

Ingredients

1 can or bottle of seedless black olives

1 can or bottle of pimento-stuffed green olives

1 small block of Feta cheese, or bottle of Feta cheese packed in herbed oil (approximately equal in volume to each of the cans/bottles above)

4-6 cloves of garlic

Olive oil

I have not put any sizes of containers in the recipe above. Basically, there are equal amounts of each of the first three ingredients.

1) Combine the olives, feta cheese (if packed in oil, drain and put oil aside) and garlic in a food processer until all ingredients are well mixed. .

2) Add a small amount of olive oil, or oil from the Feta cheese as needed to achieve a consistency suitable for spreading.

3) Blend to a smooth consistency or leave it a little chunkier…it is up to you.

A food processor is not really necessary, it just takes a little longer to chop and mix everything without it.

Serve with Melba toast, pita bread, or crackers.

NB It is tastier if made the day before and allowed to sit covered in the fridge overnight.

      This sounds excellent. I'm not really an olive fan, but I I love feta cheese, so I'd probably make it really smooth. I love new dip ideas. Thanks!
