Sharpening a Shun Chefs Knife
One of the basic pieces of equipment in your kitchen is a good set of knives. Without one, your kitchen will never be complete. How would you cut and carve your meats and veggies? A pair of kitchen scissors would never be enough. So you need to find the best set of knives you can for your budget.
Find a knife that does the job well. And by does the job well - I mean is within your budget, is comfortable in your hand, cuts as you need and does not need sharpening every five minutes. This is often where the cheaper knives let themselves down - after the first few cuts they are immediately blunt and you are far more likely to cut yourself using a blunt knife than a sharp one. By and large - buy the best knife you can afford.
These are some of the best knives available and I can recommend any of these.
Wüsthof Classic 3-1/2-Inch Paring Knife
This small pointed knife is a good addition to your kitchen, especially if you are fond of making decorative cuts on vegetables. This is great for peeling small vegetables and doing small cutting jobs. It is made of forged high-carbon stainless steel that is hand-honed for razor-like sharpness. It is dishwasher safe and the company offers a lifetime guarantee.
Talking about design, this has a traditional cut look making it really easy to match with your other kitchen knives. It also has a wide bolster which gives good heft, balance and safety in handling. The knife is really easy to handle and well balanced. This knife is light and short which adds to its comfort and balance.
Extremely good quality combined with a low price make this one a great buy.
Victorinox 47529 Fibrox 7-Inch Granton Edge Santoku Knife
This knife is really well thought of. It is like a cleaver combined with a chef's knife. It has Granton edge flutes which makes paper thin slices and prevents food from sticking to the blade. This is made of high-carbon stainless steel that is not just rust free but is very sharp with great edge retention. This can be washed with your dishwasher but hand washing is recommended.
You would probably think that this knife feels cheap because of its small and light handle. To an untrained eye, this sontoku knife might not be the best but for those who are often in the kitchen and do a lot of cooking, the knife's light weight gives them more comfort and balance.A good all rounder at an extremely low price.
J.A. Henckels 31161-201International Classic 8-Inch Stainless-Steel Chef's Knife
This Henckels knife is a large 8 inch multipurpose chef's knife. It is a really nice knife for chopping, mincing, slicing, dicing and for other practical uses. It is made of stain-resistant carbon steel that is very durable and sharp.
You just have to clean it gently with mild dishwasher soap because it gets scratches from using rough cleaners. Although the knife still works well and stays very sharp despite the scratches.
The only drawback is that it is heavy for everyday use. I prefer a heavy knife myself - but some may not. Either way - this is an extremely good knife for the price.

The handles are not just beautiful with its elegant black color but have good grip as well. Hence the name - made of nonslip rubber which ensures a safe and secure grip.
Hand washing is recommended once again to avoid scratches and making the knife blunt. This Oxo good grips knife is an inexpensive way to start cooking.
