Fluffy Pistachio Pudding Cake
This is a really simple easy dessert recipe made with boxed White cake mix and instant Pistachio pudding. I know there are many variations of this recipe out there. Here is how I make Pistachio Pudding Cake. I also use other flavored puddings as well, but this one is my favorite flavor. Although I also like Cherry cake with Pistachio pudding as well. Yumm.
** 1 box white cake mix ( any brand you like )
** 1 box instant Pistachio Pudding ( again any brand you like )
** cool whip ( I would go with the real thing here )
** Maraschino Cherries
Start by making the cake according to the package directions. Let the cake cool completely. When cool take a wooden spoon and poke holes in the cake. At least 4 holes across, it will be about 5 or 6 rows. Make the pudding according to the package directions. I used a pastry bag to fill the holes. Yes it did take time, and it was a little messy, but it is the easiest way to get the pudding into the bottom of the cake. Next I took some cool whip and mixed it with the rest of the pudding and frosted the cake. This way I have two different textures of the pudding. I covered it and put it in the fridge. When I cut and serve the cake, I put a dollop of cool whip and a maraschino cherry on top. Keep any leftover cake in the fridge, because of the dairy content in the pudding. It will spoil.
Some other combinations examples can include:
** White cake with banana pudding, cool whip and fresh banana on top
** White cake with Cheesecake flavored pudding, cool whip and a cherry on top, or even Blueberries!
** White cake with Chocolate pudding, cool whip and mini Hershey kisses on top
** White cake with Butterscotch pudding and cool whip, and mini butterscotch candies
You can really use any flavor cake mix you want with any pudding. Just let your imagination take over, and be creative!
