Fluffy Rice Pudding

If your a fan of rice pudding you will love this delicious and classic recipe. Have it with raisins or leave them out if you want.

Yields: 6 servings


  • 2 Eggs
  • 2 1/4 cups Skim Milk
  • 1/4 teaspoon Nutmeg
  • 1/3 cup Sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla
  • 2/3 cup Cooked Rice
  • 1/4 cup Raisins, (optional)


  1. Preheat oven to 350 degrees F. Whisk eggs with milk in a medium bowl. Add nutmeg, sugar, salt, and vanilla.
  2. Add rice and raisins to egg mixture; mix well. Pour into lightly greased custard cups.
  3. Place custard cups into a 9x13 inch pan. Add enough hot water to pan to come halfway up the sides of the cups.
  4. Bake for 40 minutes or until set around edges. Once set take the pan out of the oven and let the cups sit in the hot water to slowly cool.


- For a crunchy treat add 1/3 cup finely chopped pecans to the batter

- If your raisins are dried out or hard soak them in a little warm water or apple juice for 30 minutes
