Bacon, Onion, Cheddar Quiche
Perfect with a small fruit or green salad
Frozen deep dish pie crust
1 Pkg of Bacon (Turkey Bacon works well too)
1 Large Onion
1-1/2 cups Half and Half (Cream can also be used.)
1-1/2 cups shredded Cheddar Cheese
1/4 teaspoon Salt
Crisp 6 or 7 slices of Bacon under the broiler. (Crisp enough that they will crumble or easily pull apart.) Put on paper towel to dry any excess grease. Crumble or chop bacon into pieces. Chop and lightly saute the onion.
In the pie crust layer the bacon, onion and shredded cheese. Beat together the eggs, half and half and salt in a bowl. Pour the custard mix into the pie crust over the layers.
Place in preheated oven at 375 degrees for 35 to 40 minutes or until top is golden brown and knife inserted 1 inch from edge comes out clean.
Allow to cool slightly before serving.
