Foreman Grills and Healthy Low-Carb Recipes

I received my George Foreman grill as a gift, and frankly, I never really thought I would use it much. Then one day, when we were planning to grill burgers outside, it rained and ruined our plans. I didn't have anything else thawed out for dinner, so I decided to give the Foreman grill a try. I was amazed at how good the burgers were! They were crunchy and brown on the outside, and tender and juicy on the inside. And because the George Forman grill cooks from both the top and the bottom at the same time, the meat cooked quickly. I decided then and there to use the grill more often and to experiment with different dishes, especially low carb recipes.
I tried all kinds of foods on my grill. At first, I stuck to meats. For meats with little fat, I sprayed both cooking surfaces of the grill with non-stick cooking spray. I especially liked boneless skinless chicken breasts and thighs cooked in this manner. From trial and error, I learned to use a meat mallet to flatten the chicken pieces, which allowed for more surface area, thereby reducing cooking time and providing for more browning. Sometimes I marinate the chicken in teriyaki sauce, and at other times, I marinate them overnight in white wine. Both are delicious!
I found out that grilling fish fillets was much easier on the Foreman grill than it is on the outdoor grill. The fish doesn't fall apart as easily, and it cooks in no time. Shrimp skewers are also great on the grill, and they can be seasoned with teriyaki, butter, garlic, cajun seasoning, or lemon juice. They cook in just a few minutes.
Beef steaks and fresh pork are good on the grill, especially boneless steaks. Steaks with bones, like T-bones, don't cook as evenly.
I also discovered that vegetables are wonderful when cooked on the grill. I like to slice yellow squash, zucchini, large onions, or eggplant into planks about 1/3 to 1/2 inch thick and brush them with olive oil or melted butter. I add garlic salt and pop them in the grill until they're just tender. Fresh tomatoes are good this way, too. When I remove the hot tomato slices from the grill, I top each with a slice of provolone cheese. The cheese melts, making a delicious side dish. The Foreman grill is a great way to cook these low carb veggies for healthy low carb diets.
Cleaning the grill is easy if you're religious about using the cooking spray. Otherwise, it can be a messy job. Some of the newer George Foreman grills have removable racks that are dishwasher safe.
