French Toast for Weekend Brunch

     Well, this all got started because we saw Tom Hank’s newest movie, Larry Crowne. His character is a retired Navy cook who makes French toast for Julia Roberts. Now, if Julia Roberts came to our house expecting French toast, we would make her some, wouldn’t you?

     French toast is a popular Easter Breakfast item in Spain. Although, it is popular in Germany and other European countries for breakfast too.

    The only way to serve this is with the REAL Maple Syrup. Did you know there were different grades and quality of Maple Syrup? Take a look at the brands at the store the next time you buy maple syrup. The brand we had was NOT of the top quality. If you are going to pay for maple syrup, pop a bit more and get the best is what I say.

    Maple syrup is made from the sap of the maple tree (acer saccharum.) It takes about 40 gallons of sap to make a gallon of maple syrup. The sap is boiled down. Maple syrup must be 66% sugar in order to be considered maple syrup, by law!

    Maple syrup is natural and better for you than many other types of sugars. Maple syrup contains minerals and amino acids naturally. (Don’t believe me, go to the link below, the Michigan Maple Syrup people, to learn more about this.)

    Native Americans taught the settlers much about the collection/harvesting and production of maple syrup.

French toast

Ingredients:

6 slices of French bread If it is a bit stale all the better Hint: Try some of the sweet breads like Hawaiian pineapple sweetened bread as this is yummy as French toast

3 eggs Sometimes I use egg substitute

½ C. milk I use rice milk (you may want a bit more milk here)

1 T. vanilla

½ t. cinnamon This will not mix well and that is okay

1 T. sugar

Maple Syrup

Instructions

Slice the bread and sit in reserve

Heat up your pan on medium to cook NOTE: I use a non-stick skillet for this.

Crack the eggs in a bowl and whisk

Add all the rest of the ingredients and whisk

Dip the bread in the mix, coating both sides. You may have to turn the bread a couple of times.

Fry until done to your family’s particular taste, we like crispy

Now, I am sure you noticed that I made two crispy fried eggs in that cast iron skillet. We like our eggs over medium.

Variations:

· sprinkle powdered sugar on top

· Top with your favorite in season fruit, blueberries, strawberries

· Top with a bit of jam

· Top with whip cream

      This making me really hungry. My cousin used to tap his own maple trees every spring and ohhh the syrup was delicious.
