Easy Strawberry Rhubarb Upside Down Cake
I was hosting a dinner party one night, and had planned to serve pineapple upside down cake for dessert. I was upset when I discovered I was out of canned pineapple. I opened the refrigerator and found I had fresh strawberries and Rhubarb, so I decided to get creative and this great upside down cake recipe was born.
Strawberry Rhubarb Upside Down Cake
1 French Vanilla Cake Mix (or yellow cake mix), 3 Eggs, 1/2 Cup Applesauce, 1 Cup Orange or Pineapple Juice,
1 1/2 Cup sliced Strawberries, 1 1/2 Cup diced Rhubarb, 3/4 Cup Brown Sugar, 1/2 Cup Melted Butter (unsalted sweet cream)
Preheat Oven to 350*
Mix together- Cake mix, eggs, applesauce, and fruit juice
In a separate bowl stir together diced fruit, butter, and brown sugar
Next, Grease or Spray your cake pan of choice with vegetable oil .(I like to use a bunt or fancy round pan) Pour fruit mixture into the bottom of pan. Then pour cake batter on top.
Bake at 350* for 35-45 min. Check to see if the cake is done by inserting a steak knife into the center-- the knife will come out clean when ready.
Let cake cool 10 min. The cake should still be slightly warm to remove from pan. Place your cake plate or cookie pan on top of baked cake, hold plate snug, flip cake right side up.
Serve warm, or let cool completely.
Top with a scoop of French Vanilla Ice Cream or Whipped Cream.
