Easy Strawberry Rhubarb Upside Down Cake

Updated on April 2, 2012

I was hosting a dinner party one night, and had planned to serve pineapple upside down cake for dessert. I was upset when I discovered I was out of canned pineapple. I opened the refrigerator and found I had fresh strawberries and Rhubarb, so I decided to get creative and this great upside down cake recipe was born.

Strawberry Rhubarb Upside Down Cake

1 French Vanilla Cake Mix (or yellow cake mix), 3 Eggs, 1/2 Cup Applesauce, 1 Cup Orange or Pineapple Juice,

1 1/2 Cup sliced Strawberries, 1 1/2 Cup diced Rhubarb, 3/4 Cup Brown Sugar, 1/2 Cup Melted Butter (unsalted sweet cream)

Preheat Oven to 350*
Mix together- Cake mix, eggs, applesauce, and fruit juice

In a separate bowl stir together diced fruit, butter, and brown sugar

Next, Grease or Spray your cake pan of choice with vegetable oil .(I like to use a bunt or fancy round pan) Pour fruit mixture into the bottom of pan. Then pour cake batter on top.

Bake at 350* for 35-45 min. Check to see if the cake is done by inserting a steak knife into the center-- the knife will come out clean when ready.

Let cake cool 10 min. The cake should still be slightly warm to remove from pan. Place your cake plate or cookie pan on top of baked cake, hold plate snug, flip cake right side up.

Serve warm, or let cool completely.

Top with a scoop of French Vanilla Ice Cream or Whipped Cream.

You are sure to get compliments with this amazing upside down cake. I have had countless requests for this recipe. Even people who are not fans of rhubarb have devoured their helping and then asked for more. It's a good thing this recipe is easier than pie... It's piece of cake!

Eat Slowly and Enjoy!

Oh your strawberry rhubarb upside down cake looks so delicious! I love rhubarb!!! Strawberry rhubarb pie is one of my all time favorite pies. I know rhubarb is not very common in most people's kitchen, but I grew up on rhubarb when my grandmother would make rhubarb preserves and pies all the time. Rhubarb is really nutritious for you and adds a spin to cakes, pies, and jams. Great rhubarb hub! You got my vote!

Oh, so sorry! You could just add extra strawberries, or get creative and blend other berries in place of the rhubarb. It would still turn out yummy. Thank you for the vote!

      Hi Becky,

I love rhubarb and unfortunately it does not grow successfully in the south as it does in the north. We used to make strawberry rhubarb sauces to be eaten with toast so I know that your strawberry rhubarb cake would be delicious. Voted up and useful. I'll be dreaming of that great taste combination tonight! :)

Thanks Lilleyth! I love rhubarb picking time. My family looks forward to rhubarb desserts so much, that I usually freeze a bunch for mid winter treats. I'm so glad you like my hub :)
