Fresh Tomato and Basil Salad (50 Calories per Serving)

As summer comes, I am always looking for fresh, refreshing salads and nothing says summer like an abundance of tomatoes. This is an easy tomato salad that you can make from the ingredients in your own garden. The combination of sweet vinegars, cool tomatoes and the right hint of fresh basil and onions are tangy enough to pairs with a grilled chicken or a cool pasta dish.

Yields: Serves 4 people approximately 3/4 cups.

Ingredients

  • 3 Cups Tomatos, Chopped
  • 4 Leaves Basil, Chopped
  • 1/4 Cup Red Wine Vinegar
  • 1/4 Cup Balsamic Vinegar
  • 1/4 Cup Onion, Chopped

Instructions

  1. This is a simple copy and serve recipes. Just combine all dry ingredients chopped in a bowl and combines with the vinegar.
  2. For best flavor chill and marinade the ingredients for about an hour or serve immediately for a quickly prepared meal.

      The combination of balsamic and red wine vinegars really makes this recipe special!

      This is more like a salsa than an Italian recipe; the main ingredient in salsa is a little bit of vinegar that lightly pickles the tomatoes, corn, onions, etc.

      We eat LOTS of homemade salsa made with white vinegar. Using red wine and balsamic vinegars makes for a really elegant twist on the classic dish.

      We love the combination of tomatoes and basil. Your recipe sounds good. I would add even more basil as we really like basil. Perhaps even a bit of EVOO to the combination. Voted useful. Happy summer eating from the garden!
