Egg Curry Recipe

Who loves cooking..??? Well everyone does I guess. So here is a chance to enjoy you very own hand cooked food....but we usually do not like lengthy cooking if I am not wrong. No worry as here I have a very short and tasty and tummy filling recipe for your taste buds. So every one put on your aprons and get to cook for yourself and your loved ones...This recipe is for two serving that I am describing for 2 people.

Ingredients:

1- 4 eggs

2- 2 Tomatoes

3- 2 Onions

4- 2 Green chilly

5- 2 Bay leaves

6- 2½ tsp of Salt

7- Dry mango powder (Optional)--> Use only if you want the curry to be a bit tangy

8- 1 tsp of Ginger garlic paste

9- 2 tsp of Turmeric powder

10- ½ tsp of Chilly powder

11- ½ tsp of Cumin seeds

12- 2 tsp of Cumin powder

13- Coriander leaves for garnishing

14- 1 small cup of water

15- Oil

Procedure:

1- Boil the eggs for 15 minutes after they are boiled break the shells off and keep aside in a bowl.

2- The in the same bowl add 2 tsp of turmeric powder and rub the boiled eggs over it.

3- Cut the onion into small bits with the knife and grate it into your food processor.

4- cut the tomatoes also into small pieces and keep aside.

5- Then in a pan pour oil and shallow fry the eggs until they turn golden brown and then keep aside.

6- Then in that same oil add the cumin seeds and bay leaves and fry for 1 minute.

7- The add ginger garlic paste and also pour the grated onions and fry until it becomes golden brown.

8- Then add 2 chilli's cut into two slits from the middle and fry as well.

9- Once they all together become light golden brown add the tomatoes and fry for a few minutes and then when fried add a small cup of water to it.

10- Then add salt, dry mango powder and cumin powder and stir well.

11- When the tomatoes have started cooking well then put the fried eggs and cook for the next 5 minutes.

12- Then garnish it with coriander leaves and enjoy your tasty curry.

Now you can enjoy your curry with Rice or mashed potatoes or Bread !!. Do come back and tell me how your family like it :)
