Fried Cauliflower Cakes

They won't even know it's cauliflower

Cauliflower is a very healthy food, high in vitamin C, a good liver detoxifier, and is thought to help prevent cancer. It, by itself, has few if any carbohydrates. With this recipe, the fat used for frying, the protein in the eggs, and the few carbs in the pancake flour create a good balance to help burn fat (See my hub about losing 30 pounds to see how fat and protein can be helpful).

Ingredients:
1 head cauliflower
1 wedge garlic
3 eggs
1/4 cup pancake flour
Cilantro (also known as Chinese Parsley or Coriander Leaves), to taste
Salt, to taste
Pepper, to taste

Steam the cauliflower with a wedge of garlic for flavor, and to reduce the cooked cauliflower odor. When the cauliflower is soft, remove the garlic wedge and mash the cauliflower with a fork. Stir in the rest of the ingredients. Spoon into skillet warmed with olive oil for frying. Serve, and watch the endorsements come in!!!!
