Gluten free pizza dough with cauliflower! Delicious!

Cauliflower crust pizza is a thing of beauty!
This crust may not sound good but I guarantee its awesome! My cousin gave me the recipe and I couldn't wait to try it. If she likes it then I know I will love it and you will too. It also holds together very well while eating it. Just like regular pizza dough but better for you and low carb!
Grate cauliflower (5 cups raw cauliflower makes 2 cups grated)
Place in pan and cover with water. Boil until soft (this is hereafter referred to as cauliflower rice)
Drain well in a collander
Preheat oven to 450 degrees F.
1 CUP CAULIFLOWER RICE
1 CUP GRATED MOZZARELLA CHEESE
MIX WELL AND SPREAD ON PIZZA PAN OILED WITH OLIVE OIL OR ON A COOKIE SHEET
SPRINKLE WITH FAVORITE HERBS- ITALIAN, OREGANO, ROSEMARY, BASIL ??? YOUR IMAGINATION AND TASTEBUDS
Bake in preheated oven for 12 to 15 minutes take out and cool
Now you can put whatever you want on your crust! Just make sure that what you put on it is cooked because when you put it back in the oven you will be broiling it to melt the cheese on your toppings.
I sauteed some minced garlic and small diced fresh tomato in about 4 tablespoons olive oil, spread that over the crust. I added sliced green oinions, olives, fresh basil and fresh spinach thinly sliced shreds. I had a chicken breast leftover so I shredded that and sprinkled about half that. I topped with some shredded medium sharp white cheddar and broiled until the cheese was gold and bubbly.
This is really yummy! Please let me know what variations of toppings you use! I love to cook and I love to share food.
She said you can also use this cauliflower rice as mashed potatoes with butter. I have tried that and love it but I'm a cauliflower lover. It adds a little spice to spuds, breads and soups too.
