Garlic Fried Potatoes
Just like how my mom cooked them.
They taste very different from French fries or any other type of fried potatoes. Fried Potatoes with Garlic and Green Chillies taste somewhat like fried fish. Or even better. On an average fried potatoes are everybody’s favorite. They occupy a large space in children’s school tiffin boxes, and also in office lunch boxes. We never tire of eating them. They are easy to cook and their cooking time is also very less. So enjoy Garlic Fried Potatoes ..... cooked with a new twist ..... just like how my mom cooked it .....
Fried Potatoes
Serves 4 persons
Ingredients:
Large sized Potatoes : ½ kg
Green Chilles : 4
Garlic paste : 1 tbspn
Red Chilli powder : 1 heaped tspn
Turmeric powder : ½ tspn
Fenugreek seeds : ½ tspn
Cumin seeds : 1 tspn
Oil for frying : 4 tbspn
Salt : to taste
Green Coriander leaves : 1 tbspn
Method :
Peel the potatoes and cut them into round slices. Wash them. Cut green chillies in two halves.
Heat oil in a non - stick frying pan. Add fenugreek and cumin seeds. When they splutter, add potatoes, green chillies and garlic paste. Add red chilli powder, turmeric powder and salt.
Turn and mix well with a spatula. Cover the pan and cook over low flame. Continue turning the potatoes with a spatula occasionally until they get cooked.
Cook further over a slightly high flame and uncovered for a while till they get a crispy and slight brown crust. Remove pan from fire and remove extra oil from the fries. Spread out paper napkins on a plate and put the fried potatoes on the napkins. This will remove the extra oil from the fries.
Garnish with green coriander leaves. Serve hot with roti or bread.
