Gatte ka pulao

  • 1 cup Besan (Gram Flour)
  • 1/2 tsp Red chilli powder
  • 1/4 tsp Turmeric powder
  • to taste Salt
  • 1 tsp Cumin seeds
  • a pinch Soda bicarbonate
  • 1/2 inch Ginger, Finely Chopped
  • 2 tsp Curd
  • 4-5 nos. Mint Leaves, Finely Chopped
  • for deep frying Oil
  • 2 cups Rice, soaked
  • 4 tsp Ghee
  • 2 nos. Bay leaves
  • 5-6 nos. Cloves
  • 3 nos. Green Cardamom
  • 2 nos. Black Cardamom
  • 3 tsp Ginger paste
  • 2 inch Cinnamon
  • 2 tsp Garam Masala Powder
  • 1 cup Green Peas
  • 2 tsp Roasted cumin powder


  1. Take besan, turmeric powder, red chilli powder, salt, soda bicoarbonate, cumin seeds,mint leaves, curd, ginger in a bowl and mix all the ingredients well. Make a stiff dough by adding water to it. Divide the dough in 6-7 equal parts and roll it into cylindrical shape. Cut the roll into 2 inch pieces.
  2. Cook it into two cups of boiling water for 10-15 mins. Drain it. Keep aside and let it get cool.
  3. Heat ghee in a pan. Add bay leaves, cloves, green cardamoms, black cardamoms, cinnamon, ginger paste and saute for a minute. Add rice to it and again saute it.
  4. When the gattas get little bit cool deep fry them. Remove excess oil by placing them on absorbent paper and then add them to rice.
  5. Add salt, roasted cumin powder, garam masala powder and mix well.
  6. Add 2 cups of water and let it boil. Add green peas to it. Then cover the pan and cook it on slow flame for 5 min.
  7. Garnish with coriander leaves.
