Wheat and Gluten Free Cornbread Muffins

These muffins are simple to make and delicious. Serve as a savoury side bread with main courses or with butter and jam as a mid morning or afternoon treat.

Yields: 12 muffins

Ingredients

  • 1 cup Cornmeal
  • 1 cup Rice Flour
  • 1/2 tsp Salt
  • 4 tsp Baking Powder
  • 1 tbsp Sugar
  • 1 Egg
  • 1 cup Milk
  • 1/4 cup Melted Butter

Combine dry ingredients

Beat in egg, milk and melted butter with dry ingredients

Heap mix into greased muffin tins with a desert spoon

Method

  1. Pre-heat oven to 425 and grease or line muffin pan for 12 muffins
  2. Combine all the dry ingredients in a bowl
  3. Add Egg, Milk and Melted Butter
  4. Beat until smooth (do not overbeat) for about one minute
  5. Bake for 15 mins
  6. Serve warm with butter

      Great recipe suggestion for a healthier corn muffin. I am going to try to get my husband to make this instead of the flour version he now creates. There's always hope! Voted up.

      Thank you so much for sharing this recipe! I'm always looking for new and delicious gluten-free recipes, and since I'm still a beginner in the kitchen, I tend to look for quick and easy recipes. This one sounds amazing, and seems pretty simple to prepare. All of the ingredients are already in my house!! So excited to try this one. Voted up!

      kygirls89 I am not an expert but I served them yesterday and everybody loved them One person who doesn't like cornbread didn't try them but she said they look the same as her mum's.

      Wow, I just prepared these and tried one, and I absolutely HAD to comment again! I prepared them using non-dairy soy spread instead of the butter, and I used vanilla soy milk instead of regular milk, but they came out perfect! Nice and moist, tastes just like the cornbread I always enjoyed - especially with a little apple butter on it, right out of the oven. Thanks for sharing this, I'll definitely be making this again and again.

      Just made them! I think they turned out great!!! They did fall apart a bit though! I then let them cool longer and seems to be better! Maybe I did something wrong? Will have to wait and see what the husband says when he gets home...

      Loril, I don't know why they fell apart - perhaps leaving them in the pan to cool is needed, I find I do that with cookies and most baking. I hope your husband enjoyed them! Thanks for the comment.

      I made these in small muffin pans. Reduced the cooking time to 8 minutes. I pre-sprayed the muffin pans with Pam baking spray. It needed one more tablespoon of sugar. Otherwise, they held together beautifully, were golden brown and the texture was perfect! Really good accompaniment with my bean soup tonight.
