Grandma Hartman's West Virginia Hot Dog Chili

Heavenly Hot Dog

If you go to West Virgina you have to try a West Virginia hot dog. If you can't make the trip, try the next best thing- making this recipe at home. Serve chili on a hot dog with ketchup, mustard, diced onions and coleslaw. Sprinkle a touch of black pepper across the top and prepare for a heavenly experience. Serve with a side of fries or onion rings.

Yields: 2 lbs


  • 2 lbs ground beef
  • 1/2 tsp. cayenne pepper
  • 1 tsp. (or more, to taste) chili powder
  • 1/4 tsp. oregano
  • 1/4 tsp marjoram
  • 4 large onions, chopped fine
  • 1 clove garlic, chopped fine
  • 6 tbs. cooking oil
  • 2 small cans tomato paste
  • 2 cans (or more) water, use tomato paste cans
  • salt to taste

Cooking Instructions

  1. 1. Saute onions and garlic in oil until tender but not brown. 2. Add meat, pepper, chili powder, oregano and marjoram to onions and garlic. Cover skillet and cook over low heat, stirring often until meat browns. 3. Add tomato paste, water and salt. 4. Reduce heat to a simmer, cover skillet tightly and cook for 45 minutes to one hour. **Add water if mixture becomes too dry**
