Granny never measured

Granny lived on a farm and whatever she cooked or baked came either from kinfolks' or friends' word-of-mouth or more likely, from her own concoctions. Syrup pudding was one these concoctions. When I was older, I asked her to give me the recipe and she was a little perplexed because she never measured anything and never wrote anything down. So I watched her as she made it, and although it always tasted better coming from her hands, this is pretty darn close. I know she watches me still when I make it now. Beware: this is comatose sweet! It's good warm or cold, but do let it cool a little or you will end up with a burned mouth!

Cook Time

Prep time: 10 min
Cook time: 15 min
Ready in: 25 min
Yields: Serves 4-6 people

  • 3 eggs
  • 1 1/2 c. sugar
  • 1 c. light Karo syrup
  • 1 lg. can evaporated milk
  • 1 Tbsp. vanilla
  • 3 Tbsp. flour
  • 1/4 c. margarine
  • handful vanilla wafers

  1. Beat all ingredients except vanilla wafers together and pour into a pot. Or save a bowl and just mix them all in the pot.

2. Cook on stovetop with medium heat, stirring almost constantly until about the thickness of applesauce. Be careful that it doesn't burn! Some browning may occur on the bottom and get mixed in, but that's okay.

3. Pour into serving bowl and add some vanilla wafers on top. Serve alone or on top of ice cream. Enjoy!

The pictures and the name alone have me sold. It sounds easy and inexpensive which is always a plus in my household.
