Greek Potato Salad
- 6 potatoes, cut-up & boiled
- 4 whole green onions, thinly sliced
- 1/2 cup parsley, chopped
- 1/2 cup sweet onion, chopped
- 1/2 cup mayonnaise
- 1 Tbls red wine vinegar, salt to taste
- Feta Cheese, crumbled
- Cook cut-up potatoes into bite size pieces, place in a large bowl. Add all ingredients, to the cooked potatoes.
- Mix the mayonnaise & vinegar together, set aside.
- Pour the vinegar mix over potatoes. Mix well. Chill. Serves: 6-8.
- Add Feta cheese.
