Greek Style Potatoes in the Oven

Updated on January 29, 2012

3 - 4 Idaho potatoes cut into nice size chunks and/or wedges

2-3 tablespoons olive oil

2-3 tablespoons lemon juice

oregano

salt and pepper to taste

Preheat oven to 400 degrees Fahrenheit.

Combine all of the ingredients until the potato pieces are well coated.

Spray cooking spray into a glass (like Pyrex) pan. Place potato mixture into pan. Cover with aluminum foil.

Bake for approximately one hour and then remove foil and bake for another 10-15 minutes until the potatoes are tender.

This is an excellent side dish for roasted lamb, roast beef, roast chicken or turkey.

      Hi Bizzymom,

Sounds like a great recipy, I would probably add that Oregano is a herb. (but again if many people know about it, maybe it's not necessary - I just didn't know what it was)

Also, at what temperture do you bake the potatoes?

Thanks for the comment Kiwi Max. The potatoes are cooked at 400 degrees fahrenheit! I hope you will enjoy them.

Yummy! I had this at a restaurant called "My Big Fat Greek Restaurant". It was delicious. Now I know how to make it at home! Thanks
