Greek Style Potatoes in the Oven

3 - 4 Idaho potatoes cut into nice size chunks and/or wedges

2-3 tablespoons olive oil

2-3 tablespoons lemon juice


salt and pepper to taste

Preheat oven to 400 degrees Fahrenheit.

Combine all of the ingredients until the potato pieces are well coated.

Spray cooking spray into a glass (like Pyrex) pan. Place potato mixture into pan. Cover with aluminum foil.

Bake for approximately one hour and then remove foil and bake for another 10-15 minutes until the potatoes are tender.

This is an excellent side dish for roasted lamb, roast beef, roast chicken or turkey.

      Hi Bizzymom,

      Sounds like a great recipy, I would probably add that Oregano is a herb. (but again if many people know about it, maybe it's not necessary - I just didn't know what it was)

      Also, at what temperture do you bake the potatoes?
