Green Rice Casserole

To me rice is something that you can partner with anything like poultry, beef, fish or any type of vegetables even pork dishes and other grains. We all know that every Country have evolved ingeniously around rice dishes like pellao of India to kasha the Russian stands by, and the cracked wheat or bulgur of the Middle East., and in Italy risotto had the status of being a second course.

Today I want to share with you a green rice casserole dish that is full of flavor and have plenty of punch this is one of the meals that just stand alone and can be served by itself but it can also be the perfect side dish to any great meal plus it is healthy as can be.

To get things started all you have to do is .........Combine 3 cups cooked rice, three eggs well beaten, 1 1/2 cups chopped Italian parsley, 1 medium onion grated, 1 small clove garlic mashed, 3 tablespoons melted butter, 3 tablespoons grated swiss cheese, 2/3 cups of milk, salt and pepper to taste, add 1/4 cup of sliced stuffed olives, pour into greased 1 1/2 to 2 quart casserole, baked in 350 oven 35-40 minutes or until top browns.
