Grilled Scallops over Garlic Pasta

Grilled Scallops over Garlic Pasta

 If you love fresh seafood as much as I do then you will  love this tasty dish, its Garlic Scallops that I serve over some great tasting pasta. This entree is really easy to prepare in 30 minutes
you can have this meal on the table for family and friends to enjoy so lets get started.
 
Ingredients
 
3/4 pounds of fresh scallops
 
1/4 tsp of salt
 
1/4 tsp freshly, ground black pepper
 
3 cloves, minced garlic, divided
 
2 shallots, chopped
 
I tsp extra virgin olive oil
 
1/4 cup of vegetable broth or dry white wine
 
1/4 cup of fresh lemon juice
 
1/4 cup of chopped fresh parsley
 
Precooked whole wheat pasta ( optional )
Freshly grated Parmesan cheese and fresh parsley sprigs ( optional )
 
Steps
 
1. Season scallops with salt and pepper; toss with one third of the minced garlic. Coat a large nonstick skillet with nonstick cooking spray; heat over medium-high heat. Add scallops; cook 3 to 5 minutes per side or until golden and opaque in color. Remove from pan; keep warm.
 
2. Add oil to a pan; cook shallots and remaining garlic over medium-high heat 3 minutes or until tender. Stir in broth and lemon juice; simmer 5 minutes stir in parsley.
 
3. Spoon scallops over cooked pasta, If desired; top with sauce, sprinkle with Parmesan and top with fresh parsley if desired and serve.
 
You can make this a complete meal and serve this with a mixed green salad and warm garlic bread, this great meal will serve two very easy so enjoy.

      This looks delicious and simple!!! I love scallops and actually just recently pan seared some with salt and pepper in olive oil and butter and served them with pasta and homemade marinara...can't wait to try this recipe!!

      Sallieann, you have this recipe already in your recipe mind all you have to do is replace the sauce with some garlic, shallots and the white wine and your almost there, but I'm really glad you like the recipe ...Yes it's very easy to prepare so try it and enjoy.
