Ground Beef and Potato Stroganoff Recipe

I was on a quest to use up potatoes when I started putting this recipe together.  It turns out that using the potatoes instead of noodles is a fantastic change!

Ground Beef and Potato Stroganoff

5 medium potatoes

6 cups chicken broth (or use bouillon cubes/powder and water)

1 lb ground beef

1 onion, medium, diced

1/2 cup sour cream

1 can cream of chicken soup 10.5 oz

Cut the potatoes into 1/2 inch cubes and boil in chicken broth for 10 minutes.  Meanwhile, cook the onions and ground beef together until browned.  Drain. Add cream of chicken soup and sour cream and stir well.  Carefully add the cooked potatoes to the mixture and stir to coat.  Season with salt and pepper to taste.  Serve with a side of green beans and you've got a meal!

      Just made this for supper and it was DELICIOUS! I used red potatoes and cream of chicken & mushroom soup! This will be made again!
