Wash fillets pat dry with paper towels and season both sides with seafood seasoning (old bay, seafood magic, etc) set aside
Melt butter in a medium sauce pan. Add onion, garlic almonds and ginger. Simmer on low 5-6 minutes. (Onions will start to look clear in color)
Add spinach to pan. Saute until spinach is reduced. Add rice to pan and mix well.
Place one seasoned fillet in greased baking dish. Place rice on top of entire length of fillet in dish. Place remaining fillet on top and dot with butter. Cover and bake 25 minutes or until fish flakes.
While in pan, cut fillets into two equal portions and then plate them. Stuffed fillets shown here with avocado diced tomato and cheese.
